Here in Kansas this is called funeral potato's as it was very popular at funerals. I make this for my family also. This last Christmas my son and his wife were hosting Christmas dinner, my daughter-in-law called and asked me if I could fix the funeral potato's ( she usually cooks everything and won't let me bring anything). She informed me that my son did not want her to fix them because they just "are not like mom's". Lol I was happy to bring them. Sometimes I think it is just a sentimental thing. tfs

I make a breakfast version of this. Instead of soup and sour cream mine has beat up eggs, either cooked sausage crumbles or bacon crumble, and cheese, sometimes I added buttered bread crumbles to the top the last few minutes in the oven. . For a dinner version I add mushroom, onion and red bell peppers. Thanks for sharing this with us..

This is a variation on a dish called Funeral Potatoes Casserole. It was always served at the potluck after funerals in the East and midwest beginning in 1930's . The funeral potatoes dish is topped with a mixture of crushed cornflakes and melted butter.

When we first got this recipe, it was called “Died & Gone to Heaven Louisiana Potatoes” but I later shortened it to “Heavenly Potatoes.” 😆 We have made these since I was a kid & I quickly became the designated person to make them for EVERY family holiday get-together, my family literally revolts if I don’t make them!!! 🤣🤣 I omit the onion, & my recipe calls for topping it with crushed cornflakes and butter, soo yummy!! Oooo Tiffany, you’re making me want to make them right now!!! Hahaha 🤣😘❤️

My mom called this dish "Wake Potatoes" because people often brought it to potluck meals after a a wake or funeral. It's a family favorite now and we don't wait for someone to die! Skip the butter and thin with milk....or else with all that fat YOU might die....lol.

In Ohio we call it Cheesy Potatoes. We also crush corn flakes, add melted butter to the crushed corn flakes and sprinkle on top. Your kids would love that too!! I’m going to try the crumbled sausage. Thanks Tiff

YUM! I got a similar recipe from a girl at work, but instead of sour cream, I use plain Greek yogurt. It has the same tang but more protein. I don’t eat meat so I take protein where I can get it! I’m not super afraid of fat from the cheese or butter, but I like a little extra protein when I can find it!

One trick we use with onions is to dice very fine and saute in butter until translucent then add to our casseroles etc. They melt away and are noticeable to picky eaters.

I make this into a meal by adding either shredded chicken, or ham, and chopped broccoli florets into it before baking...YUMMY!!!

Of course Grandma's the best but I'm pretty sure mom's comes in a very close second. I love casseroles. One of my go to casseroles is what I call chili casserole. 2 cans chili of choice one box of cornbread mix (or from scratch) one can mexi corn or any kind of corn. Drain the corn reserving liquid to mix with corn bread. bake 20 min in 350 degree oven until corn bread is done. Of course you can add what ever extras you like (jalapenos, cheddar cheese etc.). It’s my youngest son’s favorite. Also I’ve been watching you for a while and you remind me of my sweet niece that passed away.She was a bright light it will be 3 years August 21. I make this. We call it cheesy potatoes. I use 2 Tbsp of minced onion instead of raw onions and I used shredded potatoes instead of country style and Colby Jack shredded cheese. I also take 2 cups of crushed corn flakes with 1 stick of melted salted butter and sprinkle on top. DELICOUS!! I have to take 2 full dishes every family Christmas.

I’ve only seen this with shredded potatoes. Cream of celery or mushroom can be used if you don’t eat meat or making for a party so it will be veg friendly!

Yum!!!! In my family those are called "Funeral potatoes" We make ours a little different. We don't use Sour cream or Cream of chicken soup. Instead we use Cream cheese and Creme of Celery soup and we also add Dehydrated onions.

I make this but I take crushed corn flakes about 2 or 3 cups and 1 stick of melted butter. Spread on top and bake. Makes some crunch.Very good! I also never put butter in the hashbrown mix. But I will try it next time.

I kind of make mine the same way but I add garlic powder to it and fried cripsy onions(the ones you use for green bean casserole) on top but everything else you added I add.
