I just bought two dozen cherrystones and,, because I hadn't opened any hard-shell clams in years, I went looking on KZbin for "refresher" instructions. I watched part of perhaps five or six-enough to know that all of them were terrible. Only AFTER I had given up on using a knife to open the clams and had steamed them just until a gap showed between the shells did I run across the TightLineVideo footage. I agree completely with the comment of "diastoleny" below . Yours is BY FAR the best one-and the safest-available. Thank you so much, Chris (in Maine)

The idea here is to eat them raw as opposed to steamed. Not that there is anything wrong with them steamed, also extremely tasty. Try putting unopened clams directly on a hot grill and then cover them with an old towel that has been soaked in water. When the clams are open (about 10 minutes) they're ready to eat.

If you cook the clam in its shell while it is alive, does it disable the abductor muscles so you can pry it open with severing them? Also great video very informative thanks for sharing.

We have an extremely high quality seafood market near us which is a great source but I'd much rather get them myself. Barnegat Bay in NJ has been famous for its clams for generations and I've been clamming there since I was a little tike, it's kind of a family tradition. Go out and get them from the bay in the morning and eat them that night, it doesn't get any fresher or tastier than that.

Nice. I am about to cook my first clam chowder. However the recipe calls for more clam in a can making me almost by double. So I got 1 can and a clam to compensate. Unfortunately I'm not an expert clams person so I lost almost all the extra clam juice.

Blitz0203 Dexter Russell brand with the white sani-safe handle are great right out of the box and easy to find. The R Murphy "Little Neck Clam Knife" with a green handle is very similar but may need to be ordered directly from the manufacturer. Do something to permanently mark the knife as yours. Right out of the box looking ones tend to wind up in other people's knife drawers.

You can, but then they will be cooked rather than raw. Cooked or steamed clams have a different texture and taste than those eaten raw but both are delicious.

Optimua Prima They are exceptionally tasty raw. Some people like them with cocktail sauce and maybe a squeeze of lemon. If the clams have been harvested from the correct area and have been stored properly you won't get sick.

+Optimua Prima No, you won't get sick as long as you inspect them first. Like he said, if they are open by themselves when you pick them up they might be dead and not suitable to eat. If they are closed they are still alive and ready to eat. Raw clams and oysters are great!

Ahh, I see. I don't steam mine I just dip them in boiling water for a second and then into cold water and they open right up. (I don't think thats steaming anyway.) Then cut into strips and fry up. :) I will have to try this, I see people eating clams raw but I have never done it. Can't you get shellfish poisoning like that?

If the clams are open it basically means they have died and with the shells open bacteria can enter and make you sick. If the shell is slightly open and you give clams a little tap and it closes, then they are still alive and fine.

I found this way to be especially difficult and dangerous, even more so with really fresh clams. If you start at the "butt" of the clam, you can wiggle the clam knife in that little notch, and work the clam open enough to slide the blade in and cut the muscles. Much easier, and you reduce the chances of slicing your hand open.

Cody, a clam knife is intentionally dull and really not capable of cutting your hand. If the clams are kept cold as stated in the beginning of the video this method is much faster than inserting the tip of the knife in at the hinge and less likely to crack one of the shells. If you've ever witnessed a clam opening competition, virtually everyone uses this method or a slight variation thereof.
