It's time to PACK! We are just a couple of short weeks away from moving into our new cabin! We're so excited about the move. We shared in a recent LIVESTREAM that we just bought our dream cabin!!! Our new cabin is actually the original cabin we wanted when we were looking to buy in Alaska, but the negotiations with the seller didn't work out in our favor so we walked away from it and bought the cabin that we're in now. When our dream cabin became available again, we jumped on it! Winter is right around the corner, we're in a mad dash to pack & get the homestead moved before the first snowfall. We're excited to take you along for the adventure! Cheers...
GF SANDWICH BREAD:
3 cups gluten-free (GF) all purpose flour
Two packages or 2-1/4 ounce of active dry yeast
2 teaspoons xanthan gum, omit if GF flour blend already has it.
1 tsp salt
1 cup water, plus additional as needed
1/4 cup olive oil (or oil of choice)
2 eggs, at room temperature
1 TBS honey
1 tsp apple cider vinegar
1. Prepare 9 x 5” loaf pan by spraying with nonstick cooking spray & sprinkle flour to coat.
2. Combine 3 cups flour, yeast, xanthan gum (if using), & salt in large bowl. Whisk one cup water, oil, eggs, honey, and vinegar together in medium bowl. Beat into dry ingredients with electric mixer at low speed until batter is smooth, shiny and thick. Add more water by tablespoonfuls if needed. Beat at medium high speed five minutes, scraping bowl occasionally.
3. Spoon batter into prepared pan. Cover with lightly oiled plastic wrap. Let rise in warm place 30 minutes or until batter reaches the top of the pan.
4. Preheat oven to 375°F. Bake 30 to 35 minutes until bread sounds hollow when tapped and internal temperature is 200°F. Remove from pan and cool on wire rack. Enjoy!
GF BISCUITS:
2-1/2 cups gluten-free (GF) all purpose flour
1/2 tsp xanthan gum, omit if flour already contains it
1 TBS GF baking powder
1 tsp salt
2 TBS sugar
1 cup, buttermilk (I use homemade milk kefir)
6 TBS butter (put butter in freezer to get cold for about 30 min).
1 large egg
2 TBS GF all purpose flour
1. Preheat oven to 450°F
In a large bowl, add the GF flour, baking powder, salt, sugar, and give it a quick whisk to combine.
2. Cut or grate frozen butter into flour mixture until it looks like the size of small peas.
3. Add in the buttermilk (or kefir) and the whisked egg and stir until a soft dough forms. (I whisk the egg right into the buttermilk or kefir). The key is to not over mix because the dough it will yield tough biscuits. The dough will be sticky.
4. Add 1 TBS flour to a large piece of parchment paper on the counter, do not roll out the dough. Place the dough on top of the flowered parchment paper. Dust the top of the dough with 1 TBS flour and gently fold dough over on itself two times.
5. With your hands form a dough round about 7 inches in diameter & 1 inch thick. If you make it any larger or flatter, you will end up with hard, flat biscuits.
6. Cut out 2 inch biscuits using a biscuit cutter, the mouth of a glass or the lid of a mason jar. Do not twist cutter when cutting; this will crimp the edges of the biscuit, causing it not to rise well. Reform the scraps into a dough round & cut out more biscuits. Put the biscuits on a greased cookie sheet. Makes approx 12 biscuits. Bake biscuits for 15 to 20 minutes at 450°F. At the 15 minute point check biscuits to see if their golden brown, all ovens are different. I like to brush melted butter on top of my warm biscuits. Serve warm and enjoy!

Tina, I am allergic to wheat and have eaten gluten-free for over 6 years now. What I discovered with gf baked goods is, after mixing the batter, like muffins, cakes, rolls, etc, let it sit for about 10 minutes, and then bake them. They will rise up a bit more and look more 'normal' to you. Have a smooth move!

My mom used to make some quick rolls when she didnt have time to bake bread. They still tasted yeasty but since the recipe uses baking powder they rise independently of the yeast. When I went gluten free I swapped out the flour for oat flour (oats pulsed with a blender) in this recipe and it worked out fine and tasted great. They are a little denser than breads with gluten but very tasty. You can use a gluten free flour as well but I like just using oats. The original recipe: Quick Rolls 1 package dry yeast ½ cup sugar 2 cups water 1 ½ sticks butter 4 cups flour 4 tsp baking powder 2 tsp salt Soften yeast in 1 cup lukewarm water. Melt butter and cool. Add sugar, butter and the additional cup of water to the yeast mixture. Add flour. Spoon into the greased muffin tins. Bake at 350 degrees for 30 minutes. Makes 2 dozen

My daughter uses the same style seat. shes 41 rides her bike year round. To work does errands on way to work. or sat. after work. long distances she uses my car. she puts gas in it. I owned this one for 6 mos still have never put gas in it. nice trade off. She lives at home so we each have certain bills to pay. home repairs are done by both of us. major ones I do. I retired early do to health issues refused social security disability. call it pride. Know to many using the system. know others who are eligible but choose to work for as long as they can manage. Looking forward to you move. more space and hopefully easier, for all of you.

Hi Tina, Joe and Parker. When you started your bike ride on the paved path next to the road I thought to myself, that looks just like the road going out the spur to Talkeetna. I was visiting my kids in Anchorage last July and took a trip up to Talkeetna on a Friday afternoon and it was such a wonderful day. Great weather and even a fantastic view of Denali. I met some really nice locals that afternoon in the town square where a band was playing. It seemed that all the local families came out that afternoon with their camp chair and blankets to spend the day with their friends and family. It was one of my favorite experiences of my trip. I can't wait to get my house sold here and move to Alaska!!! Your video brought my out of my slump and invigorated me to get off my butt and get things moving!

Looking forward to see seeing your new home. It is always a little sad when you are moving. It is exciting to start a new chapter in your life. I too came from a military life and know what you are talking about I love my home but I don’t get attached to my house. I think moving into a new home is so exciting. Yes I miss all our neighbours we have met and made really good friends with through our life. Wouldn’t have given up all the opportunities we had of meeting new friends and experiencing new adventures.
