Don't take those detracting comments too hard, I think you did a good job with the last video but it's also nice to have your opinion. I totally get why you don't lead with it too though. If someone is interested, you might still be able to get the 064/064S right now for $349 as of 7/18/2023 (read below). Not as good as $299 price but still better than full price. What is weird is that TimeMore has an Indiegogo project to get more backers right now. That show up as $449 USD price but on my phone (chrome mobile browser), I had a "Secret" perk option. That is literally what they called it and showed price for $349, I backed it immediately and got a confirmation for that price. Then I tried to find it again on my computer that hasn't logged on to Indiegogo ever, and I can't find that "secret" perk anymore. Not sure if it was a one off thing, but I saw there was 4 claimed, so I assume there are others that also found it. Good luck to those interested! Hey Lance, thanks a lot for your review and input. Also appreciate you taking the time to tell us how much effort and $$ you put in to be a trustworthy reviewer. tbh i've been considering this exact thing, but with regards to a chinchilla and my current (played out) hedgehog. I mean, they're both great. they get the job done. but, the fun-factor of the hedgehog is a bit over. One could say my honeymoon phase has ended. The chinchilla is just sitting there, with its glorious fur, asking for me to stroke its mildly confusing sheeny coat. r/chinchilla is p chill, tbh, and is probs where i'll be at the next few days to make my final decision. I’ve ordered the 064s as my first grinder ever and I’m really excited 🤩! Currently I have a super-automatic Philips and I need to upgrade to real espresso 🤪 for the coffee machine I’m not sure if Gaggia Classic will be enough because I can’t do the adjustments to temperature and pressure 😵‍💫 maybe I should save and get something slightly better that doesn’t need mods

Gaggia classic pro is a great machine that will serve you well for many years. The OPV valve spring mod is super easy to do and there are hacks you can do to get more consistent temperature.

I feel like I'm gonna stick with my 064s pledge. To me it seems like it's not that far off the 078s for both filter and espresso and then there's the fact that you have so many options for other 64mm burrs in the future. I mean 064s with SSP MPs is about the price of the 078s stock. I already feel like the 078 models are a bit much money for me and although 078s + turbo burrs in the future would be a great option, that will be a lot of money for me in the end. And then it's not an all-rounder anymore with the turbos, unless you change them out when you want espresso every time. Seems like it makes comparable cups for less money than other grinders (in my country at least). Idk maybe I'm not as worried as others with the motor either.

Hey Lance, I certainly appreciate that you've matched the industry's 'hype' over these with your coverage both objective and subjective now. In particular I found this video helpful in providing me with some context, as a Niche owner who has been looking at introducing something onto my bar to allow me to explore filter coffee further. It's tempting to go for the 078 and keep the Niche - but the 078S sound like a great multipurpose option (perhaps lateral move for my espresso, but a great improvement on filter).

Niche to me is too muddled even for espresso, you can barely taste any floral or fruity notes if at all. That's wasting money on a grinder and coffee on my book. I believe it won't be a lateral move even for espresso.

@@TheTobynorth Well... I got a P64 SSP MP and a few 1Z on hand. A neighbor of mine has Niche Zero and C40. And I have a cafe nearby that utilizes ek43. For the money and popularity, I am very disappointed at the Niche and C40. As far as flavor goes, Niche is about the worst. C40 is way too expensive for the grind speed and work flow, he ended up paying approaching 500bucks after upgrades. It takes 1-2min for espresso, emphasis on acidity too much both for espresso and brew.

I mainly pull shots on my gear pump LM vs filter (80/20) For the initial KS price, I reckon the 078s is a no brainer espresso grinder plus now we have the option of buying the turbo burr in the near future. If you wan to change to (several) different burrs(regularly), it would be a much cheaper option to go with the 064s, then the 078s, but the burr swapping is not simple and fast as other grinders as he said in his previous video. So if you want/like to swap burrs then the 064s, if not, just use the stock burrs, then the 078s is the answer.

On a good day, Specialita can nearly match to what I get served in cafes but more often than not I can tell that everything from body, to sweetness and clarity is lacking a bit. So you're keeping the 78s? Lucky for me, I got mine at the launch day price at 500$.

I'm deciding between those two options too 🤔 Kinda leaning toward the ZP6 + 064s to have a dedicated grinder for each method. Also having a relatively cheap 64mm ssp option swap in the future sounds good. Only concern for the 64s is motor longevity, but I think at that price it's worth the risk. Currently use a JX-Pro for everything, so that new combo sounds promising for me. Getting a little fomo letting pass the 078s though.

I am really thinking of going 078 because I drink light roasts a lot and am worried about the longevity but also grind quality if the 064 is having trouble. I’m fortunate enough where I can afford to change my pledge (the 078 switch will still give me launch pricing).

I'm looking to buy my *FIRST ever grinder* and that is exactly what I wanted to know (if it was a good buy or not as first grinder) at 14:54. _In the beginning I ordered the 064s(early bird 1) then I upgraded to the 078s (before the price increase), because the more robust build and 400W motor(and bigger burr surface area), even tough no aftermarket 78mm burrs(right now), but I'm not interested in replace the burrs either way, at least right now. I'm more interested in how long it will last(and needless to say of curse; grind quality), and I'm thinking stronger motor and better build gives you more longevity(like many more years, hopefully)!_

I'm sticking with my 078s at the launch day pricing. I'm moving from a Sette 270 which makes good espresso, but is just too loud. I can live with a quieter lateral move with a better workflow. I also have a Fellow Ode gen 2, so I'm covered on pour-over. I'm also a fan of not having to change my settings much when I've dialed-in, so two grinders for different purposes is okey-dokey...especially at 4:30 AM when I get up for work. 😴

Amazing video, and energy Lance. Convinced me that it wasn’t going to be enough of an upgrade for me (being more espresso focused) over what I have. Was hoping for the 078s to be the same « anomalie » the 078 is to pour over. Will stick to my manual grinders and trusty eureka for now. And just gives me a reason to get a new set of burrs for my Pietro 😂

I’d be interested to know if the 078 can pull decent shots in a 54mm or smaller basket. You’ve said in other videos that with a deeper basket you can grind coarser and get great results. Great video and energy though!

Is the only difference between the 078 and 078s the burrs? I only do pour over so I’m heavily leaning 078, but if I get get an espresso machine down the road can I simply swap out the burrs with the 078s burrs and have a good espresso grinder?

I guess this would mean that 078 can be modified to a stepless grinder by removing the parts that was pointed out in the other video. Cool! The last question on many minds is whether the actual production model of 078s, which Timemore says the espresso range is between 1-5, has any internal difference for better dialing-in than the seemingly pre-production models that reviewers received or if they changed the dial faceplate only to look like it will do wider range. Charlie Moritz appears to have the production model and coming out with his review soon.

The Niche was the best grinder for a few years when it was legitimately the only single dose grinder under $1k and made great espresso consistently. No reason to hate on it now 4 years later with tens of similar grinders to compete against

Using 078 for over 7months and it is so fantastic (upgrade from chestnut X）and the tasting profile is so clear for every beans. But drawback is that if the beans used have some bad flavour and it will be enhanced as well.

This was very exhausting (in a good way)...people are still going to have buyers remorse. I think your first video of disassembly turned me off this completely but I appreciate you saving my wallet! I have too many grinders as is

Thanks for this Lance. I know the feedback to the first video was frustrating. I really appreciate the subjective advice presented in here and think that--taken with the first video--really rounds out the review of these grinders. Your comments have made me realize that I will be totally happy with the 078S; it will be a major step up from my Smart Grinder for espresso and even if it isn't a major step up from my C3 Pro hand grinder for filter (probably will be) then at least the workflow will be better.

Nice one. That's some good energy dude. I cancelled my pledge after some good thoughts, my smart grinder pro and Bambino plus are perfectly adequate for my daily milkies I enjoy very much. No need to go spend money where it don't matter to me that much
