I got the 49mm conversion kit for my Decent and have been surprised at the difference it makes. The courser grind seems to help a lot with consistency. Even if my grind is off, the cup still turns out pretty good.

Wow! The results from this experiment gets me. Tom’s Coffee Corner has been saying for years how he truly prefers small baskets and that 54 mm and 51 mm are both really just fine! That being said, perhaps the coffee world is also going through the mini trend. The luxury handbags world has been on to mini bags for the last 5 years. However, since I don’t have a boiler machine yet, I am all for the development of more small baskets higher end machines.

I like the idea of these conversions so we can continue to use our existing equipment. I went with a 25 gram basket filling it to the max with 23.0 grams of a very dark roast to get 32 grams out. This makes for very large shots, getting the same result with less from a 49mm basket sounds god.

S-Works is their premium component and frame sub-brand and as a cyclist I instantly (and correctly) set my expectations to premium and expensive but also high quality. I think it’s a matter of time

@@LanceHedrick For better / more evenly extracted coffee? *For my 58mm Machine I have two Weber Unibaskets, not really a fan of the brand but I do enjoy the 16g basket, I found it seems like it gives a little stronger punch to the flavours without any negative effects like amplifying bitterness or acidity I assumed that's due to a better / even extraction. I also got the 28g Unibasket which supposedly has the same size and amount of holes it's just a lot deeper. I've only used it a few times because 28g is a lot of coffee to gamble with at one time for an espresso shot! But the few times I've used it, It seems like I lose flavour clarity and maybe gain body (I'm bad with paying attention to and remembering the body).

I ended up getting a 1979 la pav pro and restoring it with Tudor's help as my 1st ever machine because of this finding. Every morning is fun now. Looking forward to getting a unimodal grinder, since the version with the 49mm gh is weirdly optimised for light roasts in terms of thermal qualities and I can't really do those properly with my current equipment, not washed ones anyway. I'm using the step down basket in my Flair 58, and it's really great. The margin for good shots is soooo much bigger (as you mentioned in your other video on 49mm, Lance!). The coarser grind is also a big win (related of course). Thanks!

Awesome work and thanks for the update, that's what this hobby is all about. Testing things and finding out new ways to make tasty coffee. As of late I'm in love with a very long steeped Aeropress at low temps. Around 45 minutes with water at max 60 c makes most of my light roasts taste extremely nice to me. No harshness whatsoever, just intense flavour. Obviously this is something I can only do at the weekends or on holiday but that's fine.

The tamping is worth mentioning as well. With the Step-down Billet basket your only option, together with the additional base plate, is The Force Tamper. The resulting workflow is indeed very clean and nice but it gets a bit expensive...

I'm happy with my 2nd gen La Pavoni Pro (49mm); also perfectly happy making a 13-14g double as my standard drink - 18-20g just sounds way excessive to me. Just barely over 10 doses in a 250g bag? Hey, I still even sometimes use the single dose 7-9g basket :)

Same boat here lol. I'm pulling significantly better shots on my 58mm Argos than I ever did on my 51mm Delonghi. I think there are other factors more important to the end shot quality than puck thickness (temperature stability, pressure profiling, and grinder for example). But hey if people wanna play around it, by all means 🤷♂

I’ve got an Outin Nano (45mm basket) it makes espresso with better body than my Salvatore Compact Spring Lever (58mm basket). Feels odd choosing to pull some shots from the Outin right next to such a capable, massive lever machine. That 49mm step down looks like a fun investment. Thanks!

The math isn't perfect because the baskets aren't perfectly cylindrical. But like 21.5ish. Big doses FTW.

Nice option and video. Another option I would love to see someone offering for pourover is a 300-350ml goose neck kettle. Most people I know brew 200-300ml cups so why are all the kettles around 800-1200 ml besides the Fish? Because that’s always the way it’s been done? It’s just bulkier, more electricity and less flow control if you’re only filling it with 250ml like I do. I’ll keep on crossing my fingers a brand does this one day.

Nah. Didn't see the point. It was $200 I didn't feel worth spending tbh. If it is any better than the step down, which my feeling is it would be very hard to be clearly better, then it's spending the same amount for a lateral move. I was more interested in actual 49mm baskets and their implementation.

surely the 58mm lipped stepdown to 49mm basket is the smartest and cost-effective way to try this, especially coming from an all 58mm setup. no comments were made on taste differences between the options, so i'm presuming the espresso output on all are equal. it's also the easiest way to revert to 58mm. The grouphead conversion seems semi-permanent. any reason to pick one over the other aside from preference? Edit: which 49mm tamper would you recommend? especially one that works well with the sworksdesign stepdown basket.

But, but, but.. ..15g in 49mm is only 5% deeper than say 20g in 58mm, and it has relatively more nonuniform edge effects. So, simply upping my 58mm basket depths by a couple of millimeters, and dosing accordingly, gives me deeper puck shots with no immediate outlay and less compromise - admittedly I'm 10% more caffeinated and getting through the beans quicker too, but it'd take a while before I'd be quids-in with a 49mm conversion. By which time SWorks will have maybe be promoting 41mm kit and 49mm will be so passé? I love what you've been doing, and am inspired to experiment, but I cannot find the love for SWorks while they still push flat rim baskets - tossing sound engineering principles in the bin for the flimsiest of reasons. Rigid bottoms, yeah interested, but flat rims, er no thank you

Yeah I'm not saying 15g in a 49mm is ideal. If you watch the video I discussed, it was 20g in a 49mm. And yeah not a fan of flat.

I watched your earlier video, (maybe I missed the aforementioned one) and it inspired me to try increased puck depth, which has stuck. Tto be honest, I don't remember the doses discussed back then but my takeaway was depth. But 7 minutes in to this one there's 15g in 49mm in the Rancilio, so I'm thinking, hmm, not so deep, and I spot a little donut start, so I'm thinking hmm, what about the idol of uniformity... Then there'd been the 49mm dummy ring and mention of 10g, a pancake of a puck, and while you're clearly not too sold, it seems to get some praise for being 49mm and cheap, but to me it hints of 49mm for the sake of 49mm, without the (usually) inherent benefit of depth. Deeper pucks in deeper baskets WAS my favourite 2024 mod, and of course practical 49mm might retain the advantages while preserving the crop, but where does it stop? How about 30mm? Anyway, time to rewatch again...

It would be interesting to hear, in your opinion, strictly discussing the taste, how close can you get with a 49mm modded Decent to the Strietman (since you now own both). I'm debating between getting the conversion kit or going all in with the Strietman.

There is no way it'll be exact. A pump driven machine cannot equate to a piston driven. But you can def get much better espresso lol

I wasn't hoping an exact match but mostly trying to figure out if someone with less trained taste buds than yours can get away with the cheaper alternative (conversion kit). I've only recently upgraded to the Decent from a Pavoni. I don't regret the upgrade, 6 years of fiddling with various expensive mods to make the Pavoni temp more predictable finally got to me. That being said, I do miss the smaller diameter, I found your previous video about aspect ratio to be 100% aligned with my experience. Again thanks for the response and review(s), much appreciated.

Interesting video, as always Lance! I think the Olympia Express Moca SD was optimized for their 49mm portafilter machines so they’re designed to grind a bit more coarse. Maybe why you didn’t like the grinder. I’d love to see how you like it with a 49mm portafilter machines.

Seriously. I think you really might be able to buy a couple 49mm baskets and have a local machine shop chop and weld them together for a deep 49mm, and add a lip to catch on the 58mm bottomless portafilter, for cheaper than buying one at $200.

Why would it? The restriction to flow is the ground coffee (that has more height in 49mm); it's not a fixed volume

@LanceHedrick any one of them would work. I think discovering the universal principles between them all can be the first step. Then each machine can be explored individually to determine their optimal brew method. If that makes sense.

I also like that this helps don't cheaper options feel like they have an advantage, rather than a disadvantage, with their smaller and/or nonstandard sized portafilters!
