If I use the 1/4” engraving bit for my gridding, but I’ll be using an 1/8” bit for my cut, what is the proper bit diameter to enter?

Always use the cutter diameter that's installed at the time, so 1/4"

A grid can't be rotated once it's placed, but you can place a grid perpendicularly using other placement techniques: support.shapertools.com/hc/en-us/articles/360048848473-Gridding-Techniques
