Thank you so much for this and all your videos. I tried this today boiling Whole Foods Market unsweetened soymilk in a rice cooker for 10 minutes, using the gypsum from the link and potato starch and everything in exact proportions. When I boiled the soymilk it had a rubbery film on top. I stirred to disperse it but am wondering if this is normal with soymilk, or if I should have skimmed it off? Into the 1/3 cup of water with the gypsum and potato starch I added 15 drops of stevia as sweetener. After I poured in the soymilk and let it set for 1 hour unfortunately the consistency was thin and not gelatinous, uneven/clumpy, and there were stringy bits in it similar to the film that appeared on top of the boiling soymilk.

Felicia: i tried this recipe with whole foods’ unsweeted soymilk and was unsuccessful as well- i am suspecting that its a “soy milk beverage” (as written on the box), which may be the issue. i ended up going back to whole foods to buy my own soy beans and followed the same recipe- i was succesful!

You can make soy milk at home easily. Just it will be messy. You just need a washcloth, blender, water, soy beans, and a stove + pot. Most soy milk from the store are just nasty unless the market have a joint shop that sells homemade soy milk.

Actually eating tofu for dessert is a tremendous idea...you turn a sinful dessert into a high protein meal! And, if you make the syrup with allulose instead of regular sugar, you end up with something that is low-carb, keto friendly as well. You could even replace the starch with agar, or guar or xanthan gum and have no added carbs at all.

@jlmassey5 жыл бұрын
@@EastMeetsKitchen thanks for your quick response. I'm going to try again today. My homemade soy milk is made with soyjoy machine not sure if it makes it different. Maybe I'll try boil it afterwards. I did make sure that my coagulate mixed in and poured from 1 feet above and didn't move but the soymilk all crumbled on the bottom separated from the water 😣
@alchemistdreams5 жыл бұрын
I’ve had the same problem after trying to make tofu pudding several times, but using a different recipe. I also think the gypsum just isn’t dispersed enough because when I look at the clear bowl I use from the side I can see clearly that there’s almost a gradient from bottom to top, and there were times I could still see gypsum at the bottom. However, I haven’t figured out how to disperse it properly though. I’ve tried stirring the gypsum mixture immediately before pouring the soy milk and pouring more vigorously and from a higher height, but I still can’t get it right. It’s better, but still only coagulating on the bottom. Did you make the full amount of the recipe? I think I reduced the recipe so much that the amount of soy milk isn’t able to produce enough force from pouring to disperse the gypsum. Next time I’m going to try starting with room temperature soy milk so I can stir in the gypsum vigorously to make sure it’s properly dispersed (it’s ok to stir because it won’t coagulate at room temperature), and then steam it until it coagulates. In theory, it would work because people make tofu this way successfully, and tofu pudding is basically thinner tofu. If that still doesn’t work I’m going to try making more at once.
@jlmassey5 жыл бұрын
@@alchemistdreams yes i did. I tried it again making sure my soymilk got extra boil it still didn't work. Think I'm going to try it with Nigari or gelatin
@alchemistdreams5 жыл бұрын
Jenny Massey I’ve made it with gelatin before. It’s foolproof, but the texture is very different. Nigari will probably give you a texture closer to what you would get with gypsum. I hope it works the next time you try making it! So frustrating when it doesn’t and can’t figure out why. :(
