Great video! I clean my pike boneless using the 5 piece method and keep the loins and tails for frying but save the bone pieces until the end of winter when I then do a big batch of pickled pike!

Looks like Shakey Lakes just in front of the beach( HOT SPOT). Just went yesterday morn and caught 4 pike and 3 good size small mouth between 7am and 10:30am

I met Jonny Hendricks at party city in Mansfield Texas a week before his fight with Martin Kampman and the dude was shredded. When I told him I thought he'd KO Kampman in the first he said something to the effect of don't underestimate him he's really good. Then he took a pic with my son and I. I question the need to freeze the fish first. Not saying it would hurt anything but in a heavy brine I think you are pretty much safe from parasites. I go a step further and skip the water and do a vinegar and salt brine for 5 days. Shotgun Red's recipe. Great video!

I don't know if it is an absolute necessity, but it seems to be a big part of the flavor because the pickling solution is very sweet. Try it without the sugar and let us know!

Do you rinse the fish after the salt bath? Or do you just drain it?

Yes, rinsing the salt brine is a good idea, but if you forget it is likely not going to hurt anything
