Welcome back to The Last Homely Garden. Here is a little video all about the chutney I made on Sunday. The tomatoes are ripe in the poly tunnel, the herbs are plentiful in my herb bed. I used the outdoor cooker to finish off this delicious sticky chutney and could hardly wait for it to cool before I tried it with some cheese and crackers. I found the recipe on the River Cottage Website here

I have never met Rachel but I love her chutney! So quick and easy to make! Thank you Rachel!
The start of this video is the drone footage my son Owen took of the hay cutting. I find it quite mesmerising! The music I chose to go with it is from Epidemic Sound and is called 'In Bloom'
Everything is ready for harvest just now. It is a magical time in the garden!

Lovely. It’s great to see a recipe using smaller quantities. I see so many that fill like 6 pint jars, which is no good when there’s just me to eat it and I can’t be bothered to do the maths 😂

Yes, I so agree. It is even more than difficult these days to find anything in smaller quantities, which drives me bonkers!!!

That's probably because you're finding canning recipes. Canning up something like this properly means it can last on your pantry shelf several years and you only make it once. If it's something you enjoy eating ,even just occasionally, and you have an abundance of tomatoes (or whatever else), it's worth canning the cooked product up for later. Use smaller jars if you only go through a small amount at one time. I just canned up about 8 jars of blackberry jam because they were ready to be picked. If we had more, I'd make more!

@@MrsBrit1 when there were 7 of us in a big house with a large garden full of produce no problem. Now a widowed pensioner living alone with little storage space, I’ve had to give all that up. I’ll stick to Kate’s wonderful recipes 😊

Roast right in the pan you will cook in! That way you won’t waste all that lovely flavour. Also you will get more out of the herbs if you add the leaves after roasting.

Deglaze the tomato pan with the cider to capture all the tomato goodness. Yummy recipe.

Looks delecious Kate! I'll be patiently waiting for it to get to me on the LGS. A hint for getting all of that roasted goodness out of the pan - any liquid in the recipe can be used to deglaze, the vinegar would have worked well. I've even used a few tablespoons of water if the recipe can stand a bit more moisture.

Thanks, Kate! Looks very fun and delicious. When I have an overabundance of tomatoes, I cook them in the oven just as you did, maybe with a bit of olive oil. Then I put it all through a food mill to take out the skins and seeds. I cook it in a crockpot on very low for a long time, reducing it into a paste, and then freeze it in tablespoonfuls on a cookie sheet. These spoonfuls of tomato paste are amazing in flavor and last in the freezer indefinitely, so good in stews and sauces.

Hi @myownlittlehouse471 is the food mill you speak of like a sieve? I love your idea of freezing tablespoons of all this home grown goodness.

@jam4441 , yes mine is a metal sieve with a wooden cone that presses the fruit. I also have the food mill that has the metal crank with the metal paddle that scrapes the fruit. They're great for grapes, applesauce, etc.

Oh Kate this is lovely. I have a wonderful harvest of tomatoes and quite frankly can only eat so many salads in a week. I give some away too. This is a really good recipe and video. Thank you 🙏🏻

Thanks Kate. I made your chutney today. I’m Canadian now but my husband and I grew up in the UK. Hampshire to be precise. It’s hard to wait a week to eat the chutney. We did give it a try. My husband said delicious.😊I love it too.

That looks fabulous. Since I grow a huge garden here in south west Iowa, I will make next growing season. When I roast tomatoes, I put parchment paper on sheet pan for easy clean up. You could also declare yor pan with the vinegar. Thanks for a bit of garden goodness on this -15 Fahrenheit day Enjoying watching all your programs while knitting and sewing over our winter season, Jan Retirement is wonderful I'm loving it!

Kinda cool seeing aerial footage of a tractor raking hay. That's what it looks like anyway...maybe even using a Ford or New Holland lol. I have a tray like that, same color too. Sounds and looks like a good recipe. Love fresh grated ginger for so many things.

That looks so tasty Kate! I regularly make your carrot soup with cashew nuts - it’s a real favourite! I’ve been busy with bramble jelly lately, as there are some truly magnificent wild blackberries locally! Nothing like having a store cupboard ready for going in to the colder months. Thank you again!

Yum I think I might try this. Today, I'll be planting 3 Toad Lilly (Tricyrtis Simone), a Lenten Rose (Heuchera) around my deep brownish purple Coral Bells (Heuchera) in my shady section. I hope they take well. A nice bag of Muscari and white tulips will be going to the ground in October.

This sounds so delicious! My first taste of chutney was at a friends house in Victoria, BC…never heard of it but am a huge fan of it now. I’m like you…my spatula gets a lot of use so as not to waste a drop. Lol If you haven’t guessed by now, I just learned about your Last Homely Garden today so am binge watching.
