Omg Derek you have to try sauces made with blended up tofu!!! No one talks about it but blending up tofu and adding seasonings such as Nutritional yeast, garlic, onion, dill, salt and pep and it tastes like a creamy ranch type of dressing!! So delicious and nutritious. Keep up the videos!!

your pesto sauce is spot on - i make a very similar one using tofu and just a spoonful of cashews - a little lighter but still very tasty. plus i add a teaspoon of low-sodium miso instead of salt, and that actually adds to the mouth feel. and like you said - it's REALLY good!!

I tried roasting the tomatoes and peppers in the pan and it worked well for me. Sometimes it's too hot outside to heat up the oven. 🤪

Great recipes, and I'm going to make them. One change: Instead of of using just the juice of the lemon, I cut off the peel of a seedless lemon and include the entire (peeled) lemon. You're blending it anyway, and the pulp has substantially more nutritional value than just the juice, being more a whole food. I cut off and discard both ends of the lemon, cut it in half at the equator, put each half large-side-down on the cutting board, and then just cut off the peel, slicing downward to take it off section by section. You can do the same with the lime.

Derek, quick tip on the Jalapeño. If you want to avoid all the hassle, just cut the stem off to make a nice flat sturdy end. Then stand it on that end and ‘carve’ down each side from the top, going as deep as needed to just take off the green flesh. Spin it a bit, and take another slice, going around until you get it all, then toss the remaining seeds and white stuff in the trash!

You’re the king of sauces! I’m definitely inspired to make these. Btw, salt counteracts bitterness way better than sweet. I also find tahini a bit bitter but just adding a tiny bit of salt helps a lot

If tahini is bitter it's because the sesame seeds are bitter unless you toast them first (in a pan until golden brown).

LOVE your sauce recipes. You're the freakin' Sauce Whisperer, man. I'm serious! Love the hemp seed idea, too, for creaminess. I don't do oils and am always using nuts and seeds for my fat in sauces... but seem to forget about hemp seeds. Thank you! Idea for you: one of MY favourite sauces: peanut butter, lime, toasted sesame seeds, cashews, coconut aminos, and a whole tomato... and, of course, garlic and onion powder. Amazing on tofu and veggie stir-fries! Big love to you!

Oh man, I feel your pain with the eye taking a hit! I once had a peppermint hand soap dispenser that got jammed up; when I pumped it, it shot directly into my eye. I can honestly say I’ve never felt pain Ike that before. It literally brought me to my knees! It felt like needles were being jammed into my eyeball as I splashed water on my eye for the next 30 min. Needless to say, it was solid red for the next 12 hours.

Walmart has great prices on a 4 oz bag of pine nuts (Great Value brand) if you want to make more authentic pesto. It tends to be fresh, too.

i think the sauce recipes are going to be the most useful. a lot of the other recipes you make are based on seasonal ingredients. but the sauces are going to work their mojo year round.
