I want to find out why your dough do not needs to form a 'window' (to achieve it glutenous) when testing, compared to others I saw on KZbin?

Cuz the windowpane test simply tells you what stage the dough’s at in its development, with your goal being dough that’s perfectly developed (its gluten at full strength). So normaly on a way for making bread, you don't need do a windowpane test. thanks.
