im Chinese and i approve this video. Never seen it cooked like this with that sauce before but sounds delicious. BTW I wouldn't put soy bean in there, kinda mess up the consistency of the filling but it;s just my opinion.

this sounds absolutely amazing! though being chinese, i'd have to say that this is definitely more gyoza (japanese) than dim sum - especially with the use of sesame and mirin. if you could please do something korean (and preferably not spicy) next time, that'd be great! ^ ^

i usually eat the one with pork and cabbage filling, so tasty and we don't pre-cooked the filling... and we fry them and then steam them :)

Lovely. Just thought I'd mention that you guys are using wonton skins for dumplings/potstickers. There's dumpling skin that's already circular and slightly thicker for dumplings or for potstickers.

it doesn't need to be mushroom, in china we've got all sorts of filling, my family used to put water chestnut in it. and normally in northern china, people put Chinese cabbage, pickle vegie, in Korea, people put kimchi in pot sticker. just be creative put whatever you like... hope it helps, enjoy.

maybe use seasoned raw meat to fill the dumplings for start, pan fried them, add water, cover with lid, use the water to steam them so the meat are cooked. use spatula to slowly scrape them out if they are sticking. so u have juicy dumplings!

As Chinese, it is pain to watch Ben make dumpling like this... First, you don't cook the meat. You may use beef or pork in the filling, it won't matter much. Usually in the filling you use soy sauce, sesame oil, salt, pepper, spring onion, ginger for the flavour. Never used garlic in the filling. Raw garlic may be accompanied when the dumpling is served. You may also put veggie of your choice in the filling too, the most common ones are Chinese cabbage, chives, fennel or zucchini. Mushroom is a great choice for the filling. Pretty much you may put any meat or any veggie in the dumpling as your heart desires. Also, making the wrap by yourself instead of using the storebought one is not much a fuzz. Just make an enleavened dough then roll out as a log to get small doughs and roll it out thinly. This is a technique almost all Chinese household is used to. The fresh made wrap is tastier and easier to fold to make the dumpling as well. For the dipping sauce, some use soy sauce, some use vinegar, and some have it with minced garlic. Mirin and thai basil is nowhere to be found here in China.... It is always lovely to watch Ben put so much efforts into replicating the dishes from different countries, but it is pain to see Ben going too far and been through so much trouble to achieve something as simple as the dumpling... I'm a big fan of the channel and finally I see Ben doing something Chinese so I just have to comment on this one. Chinese food is not really like what you have as takeaway food in UK or other countries. Believe me I have been to Australia and US so I know what I am talking about. There are just too many types of Chinese food because of their origins. Come to China for your next destination and I will make you some real good dumplings :)

So I am half Chinese. And I learned from my grandma and my mother who were both born in china how to make what I know as REAL dumplings. So to my knowledge, do not cook the meat, the meat should be pork, the filling should consist of raw pork, and whatever else you like, along with cornstarch, soya sauce and sesame oil. The filling goes in raw, and u line up all ur dumplings in the pan with enough water In the pan to cover little less then half way and some oil. Then after letting it cook for a while, take off the lid and let the water boil off and then they will start to fry and get a crisp bottom. Also they didn't fold them right at all. They should have folds in them and it's way easier without the press.
