My old neighbor was a little old Italian lady and even in the cold of winter, every Sunday you would see her outside at the grill using the side burner to fry her sausage and meatballs for her Sunday sauce. I asked her why she used the grill burner and she said she wasn't going to get all that grease all over her kitchen when she had a perfectly good grill!

Becky here's at tip for you when making the breakfast sausage. To get even thickness, put the sausage between two sheets if parchment paper and roll it out with a rolling pin with the measuring rings. Then use a biscuit cutter and cut your rounds. This is what I do when needing patties. I do a few pounds and freeze them and cook as needed.

As children, seventy years ago, my mother would send us to pick up pine nuts that had fallen off trees that grew along the road. We would shell them for her and she would crush them with curry powder and make a curry sauce with chicken which she would then serve over white rice and fresh English peas on the side! Heavenly! 😊

When I was losing weight the 1 thing was that I couldn't have anything fried. I have found that if you do like a shake & bake style chicken, add a tablespoon of baking powder to your dry mixture. The baking powder helps raise the pH level of the chicken skin, creating tiny air bubbles on the surface which become crispy when cooked at a higher oven temperature of 425℉.

I’m from south Louisiana & we fry outdoors with a burner & propane tank. If your grill can heat a pan to 350 degrees then you can use that. Deep frying ina Dutch oven, as an example, doesn’t get as greasy to your stove if you have to use it indoors. Whenever I take a piece of chicken out the oil, I always replace it with one to cook. That way, the oil doesn’t get too hot. Otherwise you increase the chance of the breading getting too brown before the meat is done. Good luck!

If you prefer crispier bacon, put it on a rack on the cookie sheet, set your oven to 425 and put your pan in when the oven is still cold. This method renders it more than putting it into a preheated oven. Bake for 20-30 minutes depending on the thickness of your bacon.

I bought to 2 cooling racks that fit my large cookie sheets at dollarama for $3.00. Am shocked at what I bought because super thick quality and the same racks at canadian tire $24.99 each. No more bacon dredging in its fat. I still put parchment under rack for easy cleaning.

I love cooking, possibly never been at your level, but still, and last three years I've had some problem with my shoulder (and energy levels). Just starting to get help, and we are able to once or twice a week to make stuff for me to freeze, in stead of those God awful pre-made store bought meals (they take all the joy of food out of me). You may already know this but it's much easier to cut sausage patties out while the sausage is still in the wrapper and while the sausage roll is still partially frozen. My mom always left the sausage in the package, cut the ends off, and sliced the roll into patties with the plastic on. That way they were all symmetrical and even and she didn't have to mash out patties with her hands. Then the plastic just peels off of the round patties. Easy Peezy. I hope that made sense. I've never tried to describe that process before. 😁

Lard and tallow makes the best fried foods!! You can melt some lard or tallow in your sheet pan and heat in the oven. Lay your strips down and turn to coat both sides. Then bake 425 for 18 min. I reheat in the oven under a low broil. They aren’t “as good” as fried but they save a lot of time, fat and mess!!

I knew someone that would do something similar with French fries! He would put oil on the sheet pan then the fries. I don’t remember temps or time in the oven, but he swore by this method for frozen fries!

I talk about you like we’re friends 😊 With that being said, I’ve been making homemade chicken tenders for the freezer for a while now, one of my favorite items for the kiddos. When I make chicken tenders I also make chicken patties for future chicken sandwiches and they turn out fantastic! Give those a try with the chicken thighs next time!

Kitchen hack from a southerner: If you’re out of buttermilk, use one cup of regular whole milk and add a tablespoon of white vinegar, stir and let it sit for about 10 minutes. Voila, buttermilk! Thank you for sharing your recipes with us, I can’t wait to see what you get into next!

I do chicken marinated in Ranch dressing and Frank's hot sauce (I actually use my own homemade hot sauce). After pulling it out of the freezer, I don't take off any of the marinade, but then dredge the chicken pieces in Panko bread crumbs and bake the chicken in a 400 degree oven. The marinade acts like a juice protector and flavor enhancer and the Panko makes the outside nice and crispy. I also make the marinade, coat the chicken pieces and THEN freeze everything on a flat sheet. Once frozen, I pop into ziploc baggies and have chicken ready to cook at any time. I cook from frozen and they come out great every time.

I love making chicken tenders, however, since I am a widow and live alone I make a couple of batches in my 6 quart air fryer. I use panko instead of flour and lightly spritz with olive oil. They Don't get quite as brown but are still really crispy and moist and cleanup is so much easier in the air fryer. If they do well in an air fryer they should do well in your oven with a light spritz of olive oil. Love watching all your adventures in the garden, house and kitchen. I am 77 years old but I have learned a lot from you and now regularly freeze things for my convenience. You are an inspiration and just fun to spend time with. Thank you for sharing your life.

If you want to cook in the oven and get that super crunchy texture I suggest putting the chicken on one of the cooling racks- on top of a baking pan underneath. This gives it air flow to get crunchy all around- but any drippings get caught in the pan. I do this with breaded chicken and pork all the time. Comes out so juicy and crispy without the oil! So much easier to clean too!

Hi Becky! You inspired me to do some meal prep yesterday. I made chimichurri chicken meatballs. They are delicious! Also, wanted to let you know that I've found the initial seasoning of your black stone is the most important. Really taking the time to heat/cool multiple rounds (we did 4) of oil prior to using has allowed ours to never rust. Then clean it while it's still hot after each use and apply a thin layer of oil. We have family that didnt do as thorough of an initial season and they have had rust issues. Love your videos!

I always cook my sausage in one big batch and then freeze in smaller amounts of patties or links. If you freeze on a sheet pan then transfer to a bag, you can take out just what you need. We microwave but an air fryer would work well also.

Instead of throwing away your grease, you can put it on your dog's food. We put ours in a plastic butter container put in the refrigerator & we scoop from it once a week, warm it up in the microwave and once cooled enough we add it to a raw egg and feed to our dogs and cat. Their coats are nice and shiny & they love the treat❤

When I make chicken strips I fry them just enough to get a crust then finish them in the air fryer. I always strain my frying oil and keep it in the refrigerator. Oil is to expensive to throw out after one fry. As long as it has not been over heated. Always keep bacon grease.😊 Enjoy your video's , always !

Hey Becky, I have often cooked my breaded chicken in the oven. I just do it exactly like you did, but just before I put them in my oven, I drizzle it with my oil or butter. I actually put some oil in a spray bottle it works great. If I am using butter, which is absolutely delicious, BTW, I just drizzle it over my chicken. You can also bread them with crushed corn flakes that's really good too.

Becky, noticed your enamel cast iron. I love them, however I don't like the way they stain. But, I have found the solution that doesn't involve lots of scrubbing or abrasive cleaners. Fill the vessel half full of water , add baking soda and bring to a boil. ( I used about a 1/4 cup of baking soda). Let it boil for about 5 to 10 min, then take a wooden spoon or wooden spatula and scrape the bottom and sides while the water continues to boil. I have done this to all my enameled cast iron and they look like new!

My grandma would save the fat from her chickens. When she had enough she’d render it down and for Sunday lunch she’d fry chicken. Oh my goodness it was the best chicken I’ve ever had. I’m almost 60 & miss her so much. You must try it at least once in your life. Makes me want to start saving the fat, I think I will.

Hey Becky, I can attest to cooking that type of chicken in the oven. I do it all the time! It uses way less oil and is much neater. I do this with chicken parts, tenders or cutlets. Just lay out the parchment paper and put your pieces down and drizzle the oil of your choice over top being sure that your covering all the parts without having them swimming in it. Cook until golden brown turning once. I personally use light olive oil. It works out great!

Best way we have found to do large quantities (several pounds) of bacon to freeze is on our grill. We use a disposable aluminum pan that covers the grill. Once it's cooked we let it cool and put it in ziploc bags or freezer containers and I just take out what I need when cooking. You can cook it to whatever doneness you want. We do some that isn't entirely cooked so I can still render a little fat out of it if needed for a recipe.

Air fryer is perfect. If ur oven is the kind that cooks with Air circulating, that is the same thing as an air fryer. The secret to air frying is the air circulating and having air flow under the product so if u put the meat in a cooling rack in the oven that works perfect. And then I always spray some cooking spray on it and helps give it the frying appearance and texture of frying.Convection oven. That’s the name of the type of stove I was trying to remember 😊

Oven fried chicken is good even though I prefer pan fried, but I have had to alter how I cook because of health issues. Also putting your chicken in milk overnight helps keep your chicken tender when grilling my grandma taught me that even though her milk was fresh from cows and goats, but I have noticed it when I don't. I know everyone has their own ways but it's been tried and true for me. Thank you for your recipes ❤.

I have really been enjoying making seasoned ground turkey and refried bean taquitos with chopped up fresh garlic and jalapenos. You can freeze them and reheat them in the air fryer for 2-3 minutes. I just press air fry mode by the time the machine heats up my taquitos are ready to eat. The air fryer makes them crispy as if you just cook them.

Becky, I use my leftover lard to make chicken feed. Mix chicken feed into the lard, let it harden and serve it to my chickens in the winter time! They love it! When we make our homemade breakfast sausage, I form them into logs, freeze them and then cut them (when thawed) into patties, like you did today. I definitely want to try this chicken recipe!

My MIL was a professional cook, and she always “fried” chicken in the oven. 425 degrees, parchment paper on your baking sheet, 1/4 cup oil, butter, or other fat. Becky, i found your channel about a week ago. Im inspired to do some of what you're doing. With medical issues, I've begun doing a fraction of it. So far, frozen breakfast burritos and BBQ pork burritos. 😊 Im thrilled to have a nearby processor of meat. (I can't think about it, but I'm thankful for them.) We don’t thaw sausage. We just cut it frozen and fry them up. Also on the chicken tenders you could toss them in buffalo sauce after heating and have buffalo tenders. Or cut them up and put them on a salad. Everything looks delicious!

I’ve been working on perfecting chicken fingers for my 8 y o gson. I add melted butter/avocado oil combo to a mix of panko/bread crumbs/ small amount of corn meal w seasonings. Texture like lightly wet sand. I do cook til just done in oven & reheat in air fryer. He loves them! & they aren’t greasy!

Leave it in the packages and slice in your sausage patties and fry. We do it all the time. If it’s semi frozen it’s easier to slice.

Hey Becky, lean into the lard! It will change your life😊 As a southerner and lifelong bacon fat for cooking person (I'm 63), it's flavorful and quick and easy to cook with. If you're uncomfortable using straight lard, use 1/2 oil of your choice and 1/2 lard. The smoke point won't get as high. And yes, buttermilk is milk with a teaspoon of vinegar. But that's how it's done in the south. Enjoy making it next time.❤

I am for sure going to do the chicken strips and even as patties as I love making sandwiches with chicken patties. I freeze up my meatballs uncovered on a sheet pan & then put them in a baggie. I did buy 2 extra shelves for my freezer & there is a lip just 3” down below 2 of my other shelves. It’s perfect for freezing food prior to packing up & the food doesn’t stick to each other.

Hi Becky, not sure if this has been mentioned already, but a splatter screen will really help cut down on the mess frying makes. I use mine whenever I fry anything- including sausage. Just lay it on top of your skillet and it will catch a lot of the splatters.

Love this one!!! I have done this kind of prep for 30 years!! Still do, and my home has gone from 8 to just the two of us. It makes it so convenient, like you said. That never changes. One tip on your sausage patties from a born-raised Southern gal....sausage patties are much easier to get from a tube of sausage if you cut them FROZEN, INSIDE THE PLASTIC. You can determine how big/small you want them. Actually, if you've ever bought a package of Jimmy Dean sausage, there are measurements on the side of the package telling you where to slice to get an even sized patty. Something else to consider, Becki, this is totally up to you...we've raised and butchered our own hogs most of my life. Up until recent years (my health won't allow any more) but we cooked with bacon rendering. However, we never refrigerated it. It sits on the counter with my other oils. When I was younger I did do that and it seemed like it lost it's flavor. That may or may not be the case and it may just be a preference. It's one hundred percent up to you! Regardless, I love these preps and recipes!! Thanks for sharing!!! ❤❤❤

Have you tried freezing it? Let it cool in the pan, fill an empty egg carton, freeze.. once frozen, pop out and put in a freezer bag. Lasts forever and it's perfect size for adding to beans and others things

I just love your videos. ❤ Best relax for me. My husband laughs Becky is my relax show. He makes me coffee and leaves me to just watch and enjoy. He knows better than to interrupt me knowing I will try new recipes later 😁😄 I even started making extra dinners to stuff my freezer.
