It's not really superhuman strength, they just don't have pain inhibitors anymore so they can do things that we are capable of, but because we have those pain inhibitors we can't. So they can basically rip open people like that, but for moral reasons and because it can be painful to ourselves we really can't.

The reason why walkers are able to rip people apart is because they have nothing holding them back. Our brain prevents us from using such a large amount of strength unless completely necessary. Since walkers don't have a subconscious, there's nothing to hold zombies back from using the full strength a human is capable of. Even an average person can be immensely strong if the opportunity arises.

Yo Tyrone, you don't need superhuman strength to rip open someone's belly. It's still soft tissue. The guy didn't have rock hard abs either. You need strength--sure--which rage and desperation can produce. These zombies are incredibly desperate, so it's not unusal once they get their hands on you.
