Their episode about Scientology and Tom Cruise, is still one of the greatest episodes of all time. I love how they put him in a literal closet and had him packing literal fudge, so they could avoid any lawsuits by not actually saying that he was gay, haha 😆..Greatest trolls of all-time!! Honestly, South Park does provide some pretty meaningful social commentary, especially here lately. People believe it is nothing but crude humor and fart jokes. While they may have been true in the first few seasons, they slowly evolved and matured with time. They're not scared to talk about REAL issues in society and I completely respect them for it. They're the undisputed kings of satire.

For #2, you didn't even mention the best part of the "Randy is Lorde" joke. This happened back when I was still regularly watching the show and it was a treat to witness in the moment. Originally, the joke was just a throwaway gag where Randy had to pretend to be Lorde after lying to Stan that he knew her, the show wasn't saying that Randy actually IS Lorde. A writer for Spin Magazine who saw the episode and missed the joke wrote an article for Spin's website blasting the episode's unfair treatment of Lorde, so Matt & Trey (in their trolly wisdom) decided to go with his incorrect interpretation and reveal that Lorde is actually Randy Marsh (going the extra mile by including the writer himself, in all his offended glory, in the episode).

To be fair to Mel Gibson, they still show respect toward the actor/director in the imagination land episodes. He's the character who actually helps the military with his idea to fight terrorists. They then compliment him on story structure. He might be crazy, but he still made some damn good films.
