Yes I would assume anything remotely traditional would be corn. Are there really any flour tortillas in Mexico? If so i would assume that they sort of migrated from I guess Tex Mex cooking.

I'm a Mexican Mom, i cook all day, this is one of my favorite foods. This recipe aside from the tortillas ( should be corn whenever possible) , is authentic. The sauce is just perfect, the garnish with the aguacates is a great idea. I'll try it next time i make some chilaquiles.

This is a big hit on our ranch. I’ve made it twice now. Due to shelter in place, we’ve substituted canned, diced tomatoes in this recipe. Our tomatoes are not fruited out yet! My wife is an Iowa farm girl. We already kept a well-stocked pantry prior to the virus. Great breakfast with everybody home right now. The extra sauce is going on homemade pizza with sourdough crust tonight.

I was ignorant to the greatness of Chilaquiles for years! I thought-Those are nothing but chips stirred up with salsa probably so the restaurants can use up the leftovers. BOY WAS I WRONG!!!!! A friend that is more like a brother to me is Mexican, and his mom ‘s cooking is out of this world! I met him in Washington, where I went to college, and being from Tennessee I was 2,800 miles away from any family for holidays, family meals, and family get togethers. His family took me in every bit as much as another brother, and they remain like that 20 years later. Talk about straying from a point; my friends mother made chilaquiles one ïjday. Boy did I miss out all those years!! And God bless you Teolinda, Adam, Marco, Roberto, and Carlos. Truly family of mine.

Awesome finally found a good recipe, I love my cast skillets and dutch oven. I have done the quick method while camping just use tortilla chips, eggs sharp cheese and medium heat Salsa, I know its not a real authentic chilaquilles but the people camping with me were not complaining, I might make the sauce ahead of time. Where I'm from (a really hot place in México), I've seen old ladies take the moisture out of the tortillas by laying them outside since morning (since almost everyday is dry hot, and covering them with a blanket to avoid flies from getting on them. Some people bake the tortilla chips (totopos or whatever you wanna call'em), some deep fry them, and some kinda fry/toast them like Mr. Cowboy Kent Rollins did. Hope any of this works for you. Also, if you Lay them out, spread them so the air hits all of them.

In my mom traditional way to make them is with previous heated up tortilla ( left over) from previous day. And use them for this dish. They are already harden slightly and fries faster and extra crispy.

I would think they would get way to soggy. Corn tortillas fried in good amount of oil end up very crispy so u get some crispy and soft textures in the final plate. Buy his version looked very good especially the sauce, very authentic by adding the queso fresco. 3 thumbs up.

My favorite dish ever. I like my chilaquiles with lots of cheddar and Monterey Jack cheese. My methods of making chilaquiles are kinda unorthodox for mexican standards, so it's good to see someone else's take on it. Thanks a lot for sharing this

WorldGangWatch get out of here vegan extremist, good old original 100% traditional chilaquiles go with some chicken (sole people use beef but chicken is the classic). And i can say this with all confidence cause as a true Mexican i now the way to eat this dishes that came delivered from heaven. Now go and munch on some tree leafs and let people enjoy chilaquiles the way they are meant to be eaten.
