I made a batch of these this afternoon. They are terrific, thank you so much Mr. Paul. I changed the recipe just slightly to accommodate a person in my household who has quite a severe allergy to orange. Instead of peel, I used 100 gm yellow sultanas,100 gm raisins, and 50 gm chopped dried apricots. The lemon zest you suggest is brilliant - it is okay for her and you are so correct, it adds a little brightness to the buns. Thanks again.

Glad you’re okay, Spain does seem to be a bit slow on the vaccine, hopefully you’ll get sorted soon enough - my in laws are in the same position as you over there. Curfew. No vaccine. Least they have some normality for a few hours a day.

In America for 2 t mixed spices I substitute: 1/4 t coriander + 1/4 t caraway + 1/4 t nutmeg + 1/4 t ginger + 1/4 t cloves + 1/4 t mace + 1/2 t allspice... then grind them together. I cannot wait to try these!

I always thought the crosses were made of icing, and I'm wondering it would do any harm to add some icing sugar to the flour and water mixture, or would it burn in the oven? Hello Mike, as a matter of fact we made them all year round (without the cross of course) We just called them Spiced Fruit Loves. they had a glazed top similar to our Sticky Buns and were delicious sliced and toasted slathered in butter. Just use the same recipe, shape and place in a pound loaf tin allow to rise to just slightly above the rim, then bake at 170ºC for around 35 minutes.. Glaze as soon as they come out of the oven. I'm improving slowly, appointment with the clinic tomorrow (Thursday) and another at the hospital on the 20th, hoping to get out of this collar by the end of the month. Thanks for asking.

Hi Mr Paul, you say in the video that you cook these hot cross buns in an oven set to 190 degrees C, but is that in a standard oven or a fan oven please? And if it’s in a standard oven, what should I set the oven temperature to in my fan oven please? Thank you 🥀

All my oven temperatures are now for a NON Fan setting, I don't use the fan on my oven for anything. I stopped giving Fan Temperatures a long time ago as all ovens are different and it caused much confusion. A Fan oven usually runs about 20ºc high than that shown on the dial, but you really should check with your oven manufacturer.

Hi Mr Paul - You are a fantastic teacher and very clear - and yet - my hot cross buns did not come out as I had hoped. We had our son for Easter Sunday afternoon tea and I had hoped to give him a surprise with the hot cross buns that we appreciated in Australia every year - now we have been living in a Germany since 2015; no hot cross buns here for sale- Anyway my dough came out far too wet to form buns even though I had added extra flour in my desperation - I followed your recipe religiously; I can only assume it was so because I had soaked the raisins (as it is normally recommended in other recipes) but did not reduce the milk liquid you mention in your ingredients - Could this have been it??? In the end I decided to shape the dough into a loaf and baked it for about 40 minutes - it was absolutely delicious, absolutely a hit but my son and husband who knew the hot cross buns from Australia said whilst it was very delicious it did not have much resemblance in consistency/texture with the hot cross bun, was more like a moist, delicious cake. Mr Paul, where did I go wrong? If you don’t mind me asking you....... kind regards, Christiane

Hello Christine, firstly, baking is a science unlike cooking which is an art. Science always requires a formula (the recipe) Your first mistake was using information from two different recipes (soaking the fruit) the second mistake was adding more flour, this upsets the formula (ingredient balance). So you did not follow my recipe religiously did you? My recipe has been used in my bakeries for the past 60 years and as al my recipes was originally designed so anyone in the bakery could use it successfully. I'm sorry you didn't have a good experience.

Available on Amazon, but costly to what it cost in the UK. There are a lot of spices needed to make it but if you order a jar it then tells you what and how much should you still want to mix your own. I am British and use it a lot and it is a shame you can’t buy it here off the shelf. Hope this helps.

Hi Andrew, we made many Bilberry pies in my bakery in Yorkshire, but they have such a short season and only grow wild on the moors, they have to be hand picked and have never been successfully grown commercially. I'll take a look through some of my old recipes when I get time. From what I remember the filling was traditionally just the fruit and sugar but the pastry went soggy in a matter of a few hours, soI think we thickened the filling to give them a little longer life in the shop.

Hello Mr Paul , i liked your hot cross bun vidoe tips, i.followed your intructions for hot cross buns every thing came out as you said, how ever i put the bund 8in my oven 190c and they took long tome to brown and the dough was not cooked ,so i left for a further 15 mins , i use a oven thermeter , can you help why did mot cook in 15 mins pkease. thanks stephen

The only reason for that is the oven was not hot enough because it's the sugar in the dough that browns and at 190ºC they should brown very well.
