Hi Marilyn. Glad you enjoyed the video. As to the kitchen, it is a real kitchen, in our family home back in Ireland. We shot this video, when we were on holiday this year 😊 I wanted to show bakers that we can still get good results even when using just the basic tools in a kitchen.

I went right home and and made the tart on the weekend and it was a hit. The crust was so super flaky and all of my neighbors loved it. It was all eaten within 20 minutes. Thanks so much, I am sure it won't be served the last time at my house

Regarding the apples, they are bumpy, spotty, uneven size and even some of them with discolouration, because this how a true apple looks like. It is sad that nowadays most of people disregard “true” apples because of being imperfect and “defected “ and look for something unrealistic, plastic-looking. I am currently making this lovely Irish apple pie, in Ireland, with very Irish farmhouse apples, which my lovely neighbour Deidre brings to us every Autumn from her parents farm. They are perfect, spotty, bumpy, vary in sizes and so full of flavour. Can’t wait and see how the pie turns out. Love your recipes for a very long time Gemma. It turned out amazing! Can’t recommend it enough.

This is exactly how i make a British apple pie minus the egg.. besides my Mum teaching me how to make them i also did City & Guilds in catering in the 70's ..never have i used a mixer to make pastry at home.. your pie looks amazing and yes totally agree on the Bramley apples, could not find them in the USA or Singapore .. wintery puddings are the best 🙂

Irish apple tart, exactly how my mother used to make it and served with whipped cream (no sugar in the cream)! 🇮🇪 🍏 Note the cows in the field outside the window, busily chomping grass to make more butter!

Dear Gemma, thanks for the fabulous recipe. As I am living abroad this apple tart would really make me happy, I amnt sure which size of plate I should use, looking at 23-25cm diametre but what depth of plate would you recommend? The tart plates I am looking at are about 3cm deep - would that be enough? Or would you recommend 5cm depth? I would be very grateful for your reply & opinion.

The difference is that tarts only have a bottom crust, and the crust is much thicker than a pie crust. Hope this helps.

The fact that it all worked out when you didn't have modern measuring equipment shows that recipes should just be seen as suggestions. For instance, you say that your crust calls for 14 tablespoons of butter. But you didn't get out a tablespoon and measure it. You just used "enough." It shows that you are a good cook. You know about how much of your ingredients to add.

Thank you for the kind words. Most bakers, professional or not, develop this skill over time. We can tell how much a cup or a tablespoon of an ingredient looks like from years of measuring them. I do measure it sometimes just to see if I'm way off the mark, and it's usually very close to the correct measurement. As an Irish baker, we love our butter and use it extensively in recipes. Hence, we get to know on sight, how much is enough. I'm sure I'm not the only one who does the same 😊

Are you saying that the KerryGold butter available in Ireland has a higher fat percentage than the KerryGold sold in the US?

I think they're the same. Generally, most Irish butter has a higher fat percentage than other American brands. Hope this helps.

Yes, and that is why that type of apple is commonly called a Cooking Apple in Ireland. You wouldn’t eat one of those raw, it would be too bitter.
