In the U.S. there is a product called Bettter Than Bullion. Very flavorful, comes in a thick paste and it is mixes one teaspoon to 8 oz. of water. I no longer purchase the bland tasting box containers of stock. BTB comes in vegetable, beef and chicken flavors. It is my go to for making a quick stock. It mixes easily with just a bit of stirring. I sometimes add just the paste to a liquidy sauce and then add a cup of hot tap water and mix it while cooking. If sodium must be considered, no prepackaged form of stock is without so read the label for nutrition values.

That looks great. I make it quite similarly but I soak a couple of tablespoons of whole peppercorns in a double shot of brandy for a couple hours to soften them. Then add them in and light the brandy on fire. But I suppose that’s a different recipe altogether

For me, a good steak doesn't need any help beyond salt and pepper. If it's a good, well aged steak, properly cooked (medium rare), then the meat juices themselves are all the sauce you need. Now, if you are ham handed like me, and cannot resist overcooking your steaks (i SUCK at steaks), then a sauce helps a lot. I usually just put some worchestershire sauce on the plate and dip the overcooked steak in the puddle. I'm so bad at steak i refuse to even try cooking it anymore, and just go to a restaurant when i desire steak. Which isn't all that often anymore. While i can afford to order steak, i usually go for a cheaper, lower fat option these days. Just as tasty, and less likely to kill me. ^-^
