Traditional Swedish Cooking: Making Janssons Frestelse for Third Sunday of Advent with ARNE & CARLOS

In this weeks Advent Special, we show you how we make Carlos favourite dish Janssons Frestelse, which he also calls "Heaven on a Plate. Here is the recipe:
JANSSONS FRESTELSE
2 onions
1 kg (2 pounds) potatoes
2 cans of anchovies keep the liquid.
2 dl (0.8 cups) heavy cream
1 dl (0.4 cups) milk
2 tbsp grated bread or Panko
2 tbsp butter
Method:
1. Peel the potatoes and slice as to make French Fries. Peel and slice the onions thinly.
2. In a pan with very little butter, cook the sliced onion until soft and golden.
3. Butter up an oven dish and layer potatoes, cooked onions and anchovies. Start and end with potatoes.
4. Mix the cream, milk, and 2 tbsp of the liquid from the anchovies in a bowl. Add half of this liquid mixture to the Janssons. Keep the rest of the liquid for later.
5. Add small clicks of butter to the top of the Janssons and sprinkle the grated bread or Panko.
6. Cook in the oven at 225 C (435 F) for 45 minutes. When the dish has been in the oven for 30 minutes, take it out and carefully add the rest of the liquid along the corners or side of the dish. Cook for another 15 minutes.
Janssons frestelse can be made in advance and can be frozen. It is a perfect dish to have by itself or as part of a Swedish Smørgåsbord.

There's no Christmas without Janssons for me, but I know it's not to everybody's taste,. However you can replace the anjovies with smoked ham or even chorizo, both are delicious. Happy holidays 🎄

My mom would basically do this with the leftover Christmas ham. She would slice the potatoes (scallop) but it was essentially the same. I would like to try it with the anchovies though.

@@FunAtDisney Hi, just be aware that the anjovies used in swedish "Janssons Temptation" is not the same produce as italian anjovies, however it might be just as good, I actually think I need to try that😊

It is so nice of Arne to help you make your favorite even though he hates it. Like Arne I will pass on the anchovies. I was so pleased to see Arne use parchment paper to spread the butter. I really dislike when people mix up food with their hands. The way the English do much messy mixing with their hands really upsets me. It is what I like least about the great british bakeoff. I like watching how you both work together.

Frame 30:15 says it all. Arne is scarred from the dish while Carlos is in bliss. The dish looks good. First, I might try it without anchovies and later with it. I’m happy for you Carlos ; it’s nice to have personal comfort food. You’re a great sport for helping Arne and it’s best to look away quickly.😊

My great grandparents emigrated from Sweden in about 1904. Our family grew and grew, until there was quite a crowd of aunts, uncles, cousins, and grandparents celebrating on Christmas Eve. The lutefisk and pickled herring were a "no go" for us kids, and I have a recollection of another dish that sounds like Janssons. I tried it once because it smelled so good....but surprise...it had little fish in it! I imagine that I made a face like Arne. Of course there was plenty of other good things to eat, and I cherish the memories. Thank you for bringing them back for me, even if I didn't like the fish.

I’m with Arnie……. I swear I could smell it from here 😳 My 3 grown sons and husband eat kippers and I have to leave the room from the smell. The rest looks wonderful! ! Someone else had commented, and I agree, I make ham and scalloped potatoes this way. It’s sooooo good!

Arne, you could always fry up some bacon with the onions, instead of the anchovies! Then you still wouldn't need to add any salt. I'm not an anchovy fan, either, but I'm definitely going to try this with bacon.🥓🥓🥓

I agree 100 percent with Arne, no anchovies for me, but as an American, I recommend cheese as a substitute. Actually probably any other fish would do, don't you think? Enjoy it, Carlos! I know you don't get it often.

Never heard of this dish and I'm not a big fan if fish but I like to try this. My husband is a big lover of fish so I think he probably will enjoy it.

My mom’s 4 grandparents emigrated from Sweden around 1890. We didn’t have this on our holiday table. (Not with anchovies anyway.) I do want to try it someday.

Dear Arne, I'm siding with Carlos on anchovies and this dish (I'm gonna make it soon for myself), but if you wish to try it with an equally salty addition and no fish, where I live, people make this same dish with smoked ham. It is just important to find the real smoked, dry-cured ham, with the decent levels of smokiness and salt, not the pale and mild store bought type. It's equally divine as with anchovies, though it will lack the traditional fragrancy of the one with anchovies. A pinch of salt is added to that version, despite the ham being very salty. I hope you try it.

Please be aware that swedish ansjovis and Italian anchovis are not the same !!! They are not the same fish and more important they are made very differently. The Italian anchovis is much much stronger and saltier. I think two cans of that are too much. You should definitely get either the Swedish ansjovis from IKEA or a milder kind of anchovis if it’s available in your country. In Germany I use marinated Sardellen, which is the same fish as anchovis; but just marinated and not fermented. I love this dish and in my family we adopted it for our Christmas and we also eat self made gravad lax Delicious. ☺️

I am with you, Carlos. I love anchovies! I once made an anchovy pizza with way too many anchovies and ate the whole thing myself. I ended up waking up in the middle of the night seeking water. I might have gone a little bit too far with the anchovies. I will certainly try this recipe!

This dish reminds me of the traditional dish, Scalloped Potatoes. However, without the anchovies which is just fine with me. I’m happy you like anchovies, Carlos. Somebody has to 😂

I like the suggestion of replacing the anchovies with chorizo! An anchovy here and there is ok, but not very many. I’m afraid I’m with Arne on this one, but it LOOKS delicious!

I understand Arne so well. In my childhood there was a swabian dish, called "Spätzle". This is a typical Pasta in this region. As long as I can remember I hated this noodles, because in my opinion they looked like worms. Your dish I would love, but also without anchovies. Better much more onions and may be garlic. 🤤🤤🤤 I eat very less fish and when, only salmon filets. I know anchovies, but its not my taste. Thank you for showing us this yummie recipe. You can prepare it and freeze it. A big thumb up for this possibility. 🤗👍👍👍🎄🎁🕯🕯🕯

Oh my God! I have never heard of this dish and I'm 1/4 Swedish. We only had to smell the lutefisk every Christmas. I'm copying down this recipe and giving it a try. Arne is a good sport to participate (the looks on his face LOL).

I am not a fan of Anchovies either and I make a dish that’s very similar but use a couple of teaspoons of Massel stock powder in the cream instead of the anchovies. It was a funny change to see Arne NOT eating in this episode

This recipe reminds me of scalloped potatoes without the anchovies. This year I looked up the difference between Scalloped and Au Gratin potatoes and basically it's cheese. Your recipe its more about the shape you cut your potatoes and of course adding the anchovies. I've never eaten anchovies so I don't know if I like them or not. However, just like when you made Lutefisk, I would be willing to try it, given the rave review. Plus it seems people either like anchovies or they don't. It definitely would be a great recipe without the anchovies. You could add something else (such as ham or bacon) to create another flavor to this amazing dish. No matter what, potatoes with milk or cream was a staple in my very Norwegian upbringing. You have mashed, scalloped, Au Gratin, and even baked with sour cream. Lefse too. Lots of ways to serve potatoes. Thanks for the video!

Interesting! We slice the potatoes in thin rounds instead of matchsticks and call this Scalloped Potatoes in Texas. I hadn’t heard of using anchovies, but I will definitely try it! Traditions start with the resources on hand, so I guess we are more accustomed to using salt cured ham and bacon to flavor the potatoes, since this area is so far from the ocean. Takk skal du ha!

My daughter makes pasta with sardine sauce and it is delicious! I think this would be good with sardines substituting for the anchovies. Still salty and fishy but not quite so intense.

Looks delish! We make an angel hair pasta with an anchovy/garlic/olive oil paste for Christmas Eve. My dad said it would guarantee you a seat in church (because of the garlic/anchovy aroma)! 😂

Okay, this looks a lot like some form of a scalloped potato recipe. So perhaps Arne would love it more if instead of anchovies (agree with arne - yuk) with ham. there are some fabulous recipes and it is a great leftover disch with the Christmas Ham!

We make a similar dish that we call scalloped potatoes, minus the anchovies. We cut the potatoes in thin coin shapes instead of matchstick. Seems to be a Canadian dish as others have noted. You work so well together. I have never made ahead and froze. I will try this for sure!

"Janssons Frestelse" translates into English on cooking websites as "Jansson's Temptation." I have an English language Swedish cookbook from 2011 by Caroline Hofberg that has two different recipes for it, one with breadcrumbs and root vegetables and one without, which she calls a Jansson's Medley. (Hofberg's cookbook is called Traditional Swedish Cooking, if you want to search for a copy. It had beautiful photography, as well.)

Yes, we did mention it ment Jansson’s temptation in the beginning of the video. The version we made here is the purist, traditional version which only has potato, onion and anchovies. No other root vegetables belong in the original, traditional, Swedish version.

Looks delicious! I will try it with anchovies. About 4 years ago I went to an annual picnic with people in the food industry, home cooks and “foodies” . Lots of delicious and unusual food. The most surprisingly delicious dish was candied anchovies! Maybe that’s the anchovy dish for Arne!!

Great video! I love watching you guys cook! Your dish is similar to our American Scalloped Potatoes (potatoes baked in a cream sauce topped with cheese (Swiss or Gruyere)). I like anchovies but I agree that too many anchovies can be a bad thing. I think if I made this dish, I would use the anchovy liquid only. The anchovy's liquid would add a nice saltiness that you would miss if they were not there.

Not a low calorie dish, but it sounds delicious to me. Could you use some type of white fish and then increase the salt? Then maybe Arne would like it

I love anchovies, even on my pizza! This recipe is similar to one of my favorite ways to make potatoes and I can't wait to try it with anchovies.
