This was fun to watch and now I've learnt a new way of making kållåda! I am from Finland and am used to making mine with frying the onions and the beef, just to get a bit more flavour. It of course gives the dish a different consistency. Then, in the Finnish recipes you drizzle some syrup on top of the casserole, it goes nicely with the sour lingonberries. Now I want some kållåda!

Love your cooking shows! 👨🍳 This one reminds me a bit of my Mom’s “stuffed cabbage.” But yours was much easier to put together. Similar ingredients but she boiled the cabbage ahead, peeled the leaf, then stuffed balls of meat mix inside, and cooked in a tomato sauce. Berries we’re a nice touch. We used mashed potatoes.

Love you guys. Hot mess style “whoops what do I do as Julia Child” and you didn’t disappoint! LOL. I delight in your antics. I love dishes withh cooked cabbage. I have learned through time to always cook cabbage and spinach in a huge pot. The deep sides help! You can add lots of cabbage or spinach and also stir it. 😂. I love your cooking videos, and love it that you share your comfort food recipes with us! Arne, your microphone didn't pick up the sound of your chewing, so no problem. The veal fond you used, Carlos, is much thicker than stock or broth - in the US, you can buy demi-glace or "glace de viande", but you'd need to cook down stock or broth quite a bit to get it as thick as the fond you used, to get that really beefy flavor without making the dish watery (low-sodium only, or the dish would be too salty). I wonder if regular American cranberries are more or less tart than lingonberries - does anyone know? Fortunately, cabbage and cranberries are in season together here as well as in Norway, and since I have both a cabbage and a package of ground beef in my fridge . . . YUM!
@ARNECARLOS2 жыл бұрын

It might be an ok substitute. Raw cranberries are super hard. I have eaten fresh lingonberries and they are tart, but very edible as is. More friendly than cranberries.

So... without me knowing it, I have been making my own version of this for a few years now! I use a large pot, cook the meat and onions, then add the cabbage, stir it up, then put the lid on. I lower the heat, and it steams slowly, till cabbage is cooked! I then add some cream cheese, instead of cream. Only thing missing is the Lingon berries! Arne, you eat all the "dropping" you want! Like you say, we don't waste food! LOL😄

In a world of so many ups and downs how refreshing to watch these two being so caring and encouraging. Reminds me of my parents with each of us every day. Definitely the time of year for cooking something like this. Very interesting techni que with the hamburger meat. I hear the suggestion of rice. I could do that without the cabbage. But have to get the legumes from Ikea. Oh so wish we had a way to smell it! Arne is so funny and how Carlos remains very in charge in a good way.

Yum. Keep the rice out perfect, low carb is best!! I remember making lasagna in Stavanger for my friends, and it cost me $65 Australian for the meat and ingfredients, about 3 times as much as it would cost at home! It was still delicious.

Yum. Thank you for sharing. Your beef and cabbage dish is similar to one my grandmother (from Poland) made and I borrowed from her. It's been decades but I still miss her. Arne's comment of "we don't waste" is also something she always stressed. For those in the States, there is a product "Better Than Bouillon" which is very condensed (thicker than what Carlos used) and comes in a small jar. I think I've seen it online. It is usually near the broth in the grocery store. I use it in many different recipes to add flavor. There is even a concentrate from mushrooms. Carol from Wisconsin

I made this dish and it is delicious! I looked at a few other online recipes to work out the U.S. ingredients. The item listed as calf fond, I believe in the US it would be like concentrated beef bouillon. I substituted canned beef stock in place of the water and calf fond. Also substituted light cream for dietary considerations and did not miss the additional fat. The caramelized cabbage it so good. Thank you for the recipe!
