A recipe from Kongpo region of Tibet.
Loco Momo Ingredients:
3 cups whole wheat flour
1 cups all purpose flour
1 tsp salt
2 cups room temperature water
Churul Ingredients:
3 - 4 tbsp blue cheese (any kind)
1 yellow onion, diced
1 tomato, diced
4 shiitake mushrooms, coarsely diced
3 cloves garlic, minced
1 tsp of crushed erma (Sichuan pepper)
5 tbsp of tsampa (roasted barley flour) or AP flour 2 Tbsp
Tips:
When using APF to thicken the Churul, let it boil on low heat for 15 minutes after it is added. (Roasted barley requires less time since it’s cooked already)
For Loco Momo, use a pan that is deep enough to keep the water in.
Before adding 1 and 1/4th cups water to the Loco Momo, adjust the heat to the highest setting.
Let it cook until all the water has evaporated. Once it’s done, let it rest for 2 minutes.
Making the domes smaller in size will let them cook after.
