Mashallah looks beautiful!! I also use the air fryer for eggplant - A nice trick is while it is in season I buy lots of eggplant, air fry cubes and freeze them. They come out very beautiful in any cooked kofte dishes especially

Thats a great idea, so when they thawed what do you do? DO they get soggy or something. Normally I know that eggplants are not suitable for freezing.
