Tri-tip Sausage Burger Panini

Although beef chuck is traditional for making beef sausages, the tri-tip was on sale at a lower price than chuck roast. Why not go a little bougie? I made sausages and then I retained the seasoned meat that was in the bottom of the sausage stuffer and in the tube. I used that to make patties for grilled sandwiches. The flavor was excellent.
There is no recipe for this sandwich on my web site. It's just sausage, cheese and toasted bread.

This would have benefited from some caramelized onion, I’ll bet you have a few bags in the freezer. That toasted ciabatta looks (and sounds!) amazing. Ever use boiled potato to push the rest of the meat through the stuffer (or grinder)? I’ve never made sausage but I’ve heard of people doing that.

Thanks Eric. I hadn't heard of the boiled potatoes trick, but I have heard of some people using old bread to force out the last of the meat. And, yes, caramelized onion would have been a good addition. -Dennis
