This is a slight variation, and better version IMHO, of the Chicken Parmigiana I did three years ago. Using good homemade pesto rather than fresh basil made all the difference. Having a good method to flatten the chicken helped too. I used my tortilla press.
Chicken Parmesan is a classic and iconic dish that came out of Italian American cuisine. According to Wikipedia, it might have derived from serving eggplant Parmesan with breaded chicken cutlets. I served this to some friends who are accustomed to my cooking and they couldn't stop raving about it.
