I have an abundance of tomatoes from my own garden. This was one use I made of them. It's a variation on my Trout with Mushroom and Tomatoes (see below). The dish was easy to make and delicious to eat. I made my own pasta from scratch (see below), but feel free to use a store-bought pasta like spaghetti or linguine. If you don't have access to vine-ripened tomatoes, I think Roma tomatoes are a good choice. Also, feel free to use a different meat. Chicken might be good in this. Even thinly sliced leftover steak would probably work well, especially if the sauce is enhanced with a shake or two of Worcestershire sauce.
