I am Vietnamese. I can recommend hundreds of delicious typical Vietnamese dishes. Why Vietnam has a rich cuisine. There are three reasons: first, Vietnam has a favorable climate for cultivation to have dozens of spices, cereals, and fruit variety... Second, Vietnam is located between China and India, was colonized by the French, so the cuisine has been introduced and diversified. Third, a very important thing, Vietnamese people like to be creative in food processing, we don't like fast food, prefer to prepare it ourselves, which leads to a rich number of dishes.

Love a good pho! The way I was shown how to eat it on the west coast of the US is to mix in all the things you like (typically bean sprouts, mint leaves, sweet 'duck' sauce, and hot sriracha sauce) to your liking and then we eat all the stuff inside with chopsticks and usually sip the broth at the end. Not saying that's authentic just what we do. It's a wonderful worldwide dish, always feels healthful and hearty, hits the spot best in cold weather but also can be oddly wonderful when it's hot too!
