Ingredients
Cocoa sponge cake
Mould of 28cm x 28cm
2 eggs
1 egg yolk
Sugar 60g
Melted unsalted butter 40g
Cake flour 15g
Corn starch 15g
Cocoa powder 18g
180°C (356°F) for 10 minutes
Tricolor Chocolate Mousse
6 egg yolks
Sugar(for yolk) 50g
Corn starch 5g
Milk 450g
Sugar (for milk) 50g
Dark chocolate 100g
Milk chocolate 100g
White chocolate 100g
Some vanilla extract
Liquid cream 450g
Some cocoa powder
