There has to be a double somewhere in my family, and no one told me about it. I’ve seen the Caribbean black cake, and they look so pretty. I think you’re making more of an Indian traditional black cake. In truth I’ve never seen one made in my own indie Trini side. It’s beautiful. I would usually buy a black cake and then I freeze it.

I don't think so. That is how I have made fruitcakes for decades except for boiling the fruit. That is how all the people I know make fruitcakes, but we use alcohol and soak the fruits for a few months. We are not Indians. I can't see much of a difference except I use rum and cherry brandy. We never freeze our fruitcakes because we put some alcohol on the cakes every so often.

Hi Reshmi - you should be able to find the currants in the regular American grocery stores in the baking section next to the prunes and raisins. The dried fruit is called tutti-frutti mix in the Indian stores :)

Hey I don't! I know people say to take it out because it's "fresh" but it's just a myth. From whatscooking.net "Chalazae (kuh-LAY-zee) - Ropey strands of egg white which anchor the yolk in place in the center of the thick white. There are two chalazae anchoring each yolk, on opposite ends of the egg. They are neither imperfections nor beginning embryos."
