Adding baking soda when there is heat involves..unhealthy product 1. Turmeric contains curcumin, a chemical that turns red with bases and yellow with acids in water. When sodium bicarbonate (baking soda) is moistened and heated×××, it releases carbon dioxide gas×××. Dioxide can be hazardous to the health of us humans.

Well-deserved kudos. Great recipe and easy to follow. I moved from Toronto to Vancouver and could not find any Trini/Guyanese food so had to learn to make my own. Instead of oil use ghee , much more tasty ! Also can use yogurt in the dough and leave to set for 1 hr and it will still come out soft .- for people who don’t want to use baking powder/ soda . Great recipe and lovely rotis .

I cannot believe this. I have been following a Pinerest recipe and I kept thinking I did not do something right or because I didn't have a a tawa. After my latest attempt, I thought surely, it has to be right but no. I am so fortunate to have found this video tutorial. The recipe I was using is COMPLETELY DIFFERENT. Now I see why it wasn't coming out the way I was used to! Also, I need to let it sit longer! Whoa, I am so excited to make my roti with the new recipe and directions. Thank you so much! Omg my fav. We make these in Mauritius too. Not sure where dhalpuri is originally from but I'm amazed Trinidad has it as well. Ours have the more or less same filling ingredients but we'd add turmeric in the dough as well to make it extra yellow. Thanks for sharing this amazing recipe 😍❤

Natasha: You can turn this savory Dhalpuri into a Sweet dessert meal- Puranpoli. You can replace roasted cummin powder with unprocessed cane sugar or jaggery. Add the sugar or jaggery in the daal mix while it is still hot so the jaggery and sugar melts and mixes well with the split peas. You may also add powdered cardamom and cinnamon/nutmeg powder to enhances the sweet flavour. Process this mixture through mill and add this mix to your dhalpuri. You can also replace the oil with clarified butter for the rich taste. Serve this with warm milk or spicy curry for sweet and spicy taste. Enjoy!!!

I use this recipe and my DhalPourie swelled like a big balloon. Oh what a pleasure to see and it melting in my mouth. I still add a little piece of butter despite your rècipe didn't include that. I always do make roti and it comes out very soft and moist.

This is where the science comes in, the hot water activates the baking soda. Ie. A better rise equals a softer dough. I do this in my pizza dough.

yes baking soda is for what's called quick " breads". as roti is a quick cooking dough, it works well and appropriate

Ok Natasha you are my go to person for a lot of recipes and everything i try it comes out grate. Roti on the whole is not my thing, it hates me and well i hate it too. But here's my deal now, beacuse of this recipe "and shout out to ur mother in law" i can finnally say i can make a dam good dhal purie roti.
