My best friend is from Trinidad. The last time he had a currants roll was over 20 years ago when he left Trinidad. I made this for him last night and brought it over. With some of your Trini meat pie and some tamarind balls. I made dinner for him and his wife. She didn't have to cook and it brought him right back home to his Mother's kitchen. Beautiful. Do you use self raising or plain flour. Here in the UK, our flour are either plain or self raising. The plain indicates no raising agent on the flour.

Natasha last weekend I tried making currants roll but after baking the crust was hard. I used 2lbs flour, 1lb butter and 1/2 shortening. The texture was good. The crust was fine like breadcrumb n I used ice cold-water to mix. I really don't know what went wrong. Trying to make this weekend. Thanks
