you can use store bought puff pasty for this if you do not want to make the dough.
1 1/2 cups of flour
1/2 cup ice cold water
4 oz cold unsalted butter or 8 tbsp. if you are using salted butter do not add any salt to the flour.
1/4 cup sugar
1 cup currants
1/4 tsp salt
dash of vanilla or almond essence
pinch of nutmeg
pinch of cinnamon - optional

My best friend is from Trinidad. The last time he had a currants roll was over 20 years ago when he left Trinidad. I made this for him last night and brought it over. With some of your Trini meat pie and some tamarind balls. I made dinner for him and his wife. She didn't have to cook and it brought him right back home to his Mother's kitchen. I have to date used your recipe as for; meat pie, tamarind balls, currants roll, doubles and green seasoning. All have turned out exactly how they should taste according to my friend. I want to make a plater of dessert for him for Christmas. What do you recommend? Thanks

My friend, heh thanks for sharing. But trust me I can't do all these steps nah. In the fridge, out the fridge ,in the fridge, out the fridge. I putting the rest of the ingredients and bake. Next step is to eat.

Morning Natasha, is coconut roll made in a simular way, because my kids loved the coconut bake. They don't like currants.

I finally found a recipe for this!!! I'm obsessed with this and tasted it for the first time in a well known west indian bakery in Brooklyn 😊 thank you for sharing!!! I'm going to make it this weekend 😁 (by the way, should I use all purpose or plain flour for this?)

There are two ways add the butter with flour and this way which gives a flakier crust.

Natasha last weekend I tried making currants roll but after baking the crust was hard. I used 2lbs flour, 1lb butter and 1/2 shortening. The texture was good. The crust was fine like breadcrumb n I used ice cold-water to mix. I really don't know what went wrong. Trying to make this weekend. Thanks

Beautiful. Do you use self raising or plain flour. Here in the UK, our flour are either plain or self raising. The plain indicates no raising agent on the flour.

Natasha your puff pastry is the bomb! I’ve made meat pies and your currants roll recipe. Turned out great! If I didn’t want to knead flour and use the store bought puff pastry dough...how many layers you suggest I use?

hello Natasha, I follow your channel and I am a big fan. I am in the midst of trying this recipe but I am a bit disappointed about something. I did just as you said with the butter. i flattened it out with a rolling pin and enclosed it inside the dough. However, the butter began oozing out through the dough as i rolled it out and it became just a hot greasy mess. Needless to say the dough could not have been used. I tried it again with my other half of butter and froze it before enclosing, so it came out a bit better but some oozing happened as well. so my dough, in the subsequent refrigerating and rolling became sticky because the butter is melting through out the dough once it is out o the fridge. My dough is definitely not smooth. I am now waiting on the last of the chilling to happen so that i could finally pop it in the oven. Not sure how it will come out.

Tricia Willis do not add baking powder to puff pastry dough , use All purpose flour I cannot say for sure how came flour would turn out.
