I'm riging mine up with 59lb wire with a haywire twist to a swivel to 80lb mono is that good or should I use 200lb mono with crimps for a leader

Sounds like overkill. Straight mono and 80 lbs or less.

Or you can use braid to mono. Braid will cut the water better and improve depth of the bait.

At what speed do you troll Grouper for? Also How much line do you need to put out?

3 to 5 mph is good. Try about 50 to 75 yards and go from there. If you're hitting bottom, reel in until it stops kicking and bouncing so erratically.
