My first memory of pork rinds was when I was about 8 years old. My Dad used to buy a pig carcass every winter and he made pork rinds in the oven from that carcass. He used to park the carcass at the side door, freaking all the neighbors!! I won't go into the head cheese that he also made from the carcass, only that it stank like you wouldn't believe! Trotters Whole Hog is quite the organization - I wish there were something like that in Ottawa.

Trotters is one of our local faves here! Brooks loves head cheese! We have a Vietnamese place we love in Cincinnati and Brooks always gets the head cheese bon mhi sandwich
