Yes, you can use either Rice Vinegar or Apple Cider Vinegar:

please don't use rice or apple cider vinegar. It will change the taste. Plz stick to shaoxing cooking wine. The cooking wine is sweet compare to the acidic sour taste of apple cider

Nice recipe, I want to try it but Im just worried about the quantity, 6 eggs is a bit too much. Eggs have a lot of cholestrol, and the max amount is 3.. So yeah
