OMG, will people calm down! I have been on keto for two years and have gone “dirty” here and there. So what! I’ve maintained my weight all through! If I see that I gain a couple of lbs, I don’t flip out. I just pay closer attention and I’m back on track. I’ve gotten so many good recipes and tips from you girls and appreciate them ever so much. Always learning. It’s a marathon not a sprint so everyone just do you.

They have been criticized before about not being “authentically “ keto. I was sympathizing with her about people being so rigid about a little dirty keto here and there. Do what works for yo7.

As someone who used to make all my bread - before gluten intolerance, then keto - I was always taught that gluten needs to be worked (kneaded) to make the fibers stretch and stay flexible. Otherwise, they “bloat and explode”. The gas from the baking powder or yeast pushes the bread molecules apart but they’re not stretchy enough to hold the gas. So 🗯️! I would knead the dough until it’s no longer sticky, and bounces back when depressed about an inch. Then allow it to rest about 5-10 min. It should slowly raise then in the air fryer and “bake” uniformly.

If you use King Arthur’s Keto flour, adding 1/4 tsp of cream of tartar. Use a silicone bagel mold, bake 370*F for 20 minutes in a convection oven (or air fryer), they are perfect and do not collapse

I make this everyday the recipe is this. 1/4 C VWG, 1 tsp cornstarch or flour, 1/2 tsp baking powder, 1/2 tsp vinegar, 1/4 C water , mix and form into ball, let rest for 15 min, no kneeding. Oven temp 365 degrees with convection if you have it, or until crust is nice and brown. About 15 / 20 mins. I love to toast and put cream cheese ,eggs and bacon yummy. I also make 2 out of this recipe as it's so filling...Enjoy

Made again in the oven and doubled the batch. Made 4. Put salt and yeast and kneaded it and let it rest. So much better than yesterday’s attempts. I now have my favorite roll. I let cool before cutting and slightly toasted them, then topped with cream cheese and everything beagle seasoning. I can hardly wait till my kids try them🥰

To keep the dough from flying up into the heating element in the air fryer, put a rack with legs above the dough.

one thing I always do when I use vital wheat gluten in a bread is I add a little bit of yeast just for the flavor and smell.

I have been overweight since childhood and was unhappy about my weight and looks, but especially about my health for a loooong time. Same sentiments! I do low carb intermittent fasting or keto but in a bit of "relaxed" version and it still works on my end. As long as my blood work are in all good results and I'm also losing weight, then I'll keep on doing that style of mine. No hate to those strict keto or low carb group. ✌🏻

I absolutely love this recipe. Changes I made, add salt - everything tastes better with salt. Also i added far more water than you so it was a really loose mix, i patted it out to make a flatbread and cooked it lower temperature and far shorter time. Made a perfect naan bread 😊👍

I make very low carb bread for my hubby who has T2 diabetes. It is a slight tweak of Diedre's bread. VWG is a key ingredient along with oat fiber. His bread is 3 net carbs per slice and does not raise his blood glucose at all. 😊

@@katieinman2305 I use the bread machine recipe from Diedre's Kitchen channel (she has another for standard mixer, too). I use only 1 egg and ½ Tbs of yeast, though, and add ⅛ Cup rye flour for the yeast to feed on. 16 slices = 3.5 net carbs per sluce even without counting the yeast's consumption. I take time to make ahead multiple jars of the dry ingredients (in reverse order) excepting the yeast. Makes it easy to every other week or so to put the wet ingredients, butter, jar of dry mix, and yeast into the machine. Like regular bread, sometimes it rises less than I would like, other times it's crazy high! Always tasty and a bit like whole wheat in appearance. Hope this explanation helps 😊

@@jedwards1313 hi, Diedre posted her low carb bread recipe on YT about 7 years ago, before keto was really a "thing". At the time her recipe "went viral" but people did not always refer to her channel "Diedre's Kitchen". Those videos are still there. She didn't continue to post but her bread recipe continues to bring diabetic people the joy of home made bread! Her recipe does contain gluten, though - which is still an option for many low carb lifestyles, whereas most gluten free breads are not. I replied to another commenter above with my adjustments for my husband's version... which I make every week or so. I don't think the Twins have posted this one, I was just sharing that vital wheat gluten does not raise my husband's glucose. Sorry for such a long reply, I hope this helps clarify some details 😊

Perhaps make it into a bagel shape and cook it at a lower temperature in the air fryer. That would solve the problem of the middle not cooking thoroughly. Roll the dough into a ball, flatten slightly and poke a hole in the middle with your finger. Stretch the dough slightly then let it rest. Maybe 325° instead if 375°?

Wheat Gluten bread used to be the go to for those with diabetes since way back ( and I am old enough to remember) in the fifties and sixties. Vegetarians often make a product called Seitan ( the Japanese name) or Wheat meat out of wheat gluten. Simmer it in stock and it pretty much takes on the flavors it is simmered with. I ate it almost every day for years- for those who have gluten sensitivity or celiac disease, of course this is a big no no- but for everyone else.... good stuff. King Arthur makes a Keto Wheat flour and vital wheat gluten is the main thing in it... that flour acts pretty much like regular flour at 16 grams of net carbs per cup- a substantial difference! At the net carb being the same for the keto flour and the vital protein, I would use the keto FLOUR for baking ( it makes great bagels with yogurt- aka weight watchers bagels ) and use the vital protein as a meat substitute by making it into seitan and simmering in broth.

I make my own keto bread (Mary's test kitchen recipe) with vital wheat gluten, oat fiber, flax seeds and yeast. I swap half the flax seeds for Caputo white flour which improves the taste and keeps the carb count low per slice. It bakes up nice and fluffy in the oven. The slices are soft like commercial bread yet sturdy enough for sandwiches or burgers.

I'm gluten sensitive, so can't use VWG. But I found an oat fiber/psyllium husk bread recipe that is pretty good. I like the oat fiber...just wish I could find more recipes using that without VWG (my recipe uses crumbly cheese to help bind it).

it's helpful to put weights on the parchment paper so it doesn't fly around and dislodge whatever you're cooking. that will avoid some calamities. i love that it's so high protein as i struggle to ingest enough every day. thanks for the vid.

Thank you for this test. Will definitely being trying this. I make whole wheat bread for my boys and it uses vital wheat gluten. Like some other commenter you could try a little olive oil. I use three tablespoons in my two medium loaves of bread,so I would guess no more than a teaspoon. Love you guys.

Just made this for lunch, and I was pleasantly surprised! To develop more flavor I used whole wheat flour, and let sit on fridge for a few hours. The texture was what I though it would be, very, very chewy, but it made a lovely crust that I enjoyed. I’ve been baking sourdough bread for over 30 years, so vital wheat is always on hand. Thanks for video.

Finally made this today. Same recipe but added more water. To th not quite sticky point. Shaped it and flattened it pretty thin wit a pretty big hole. I baked it at °350 for 25 minutes. Ate half and it was good but a littl chewy. Toasted half and mo chewy. I'm going to make a few par-bake and freeze for last minute yum.

you have to watch with parchment paper in an air fryer especially the kind without the holes. The fan inside will blow the parchment paper up toward the heating element.

I did this recipe today and I’m really excited. two things that I learned is that it probably should be broken up into smaller pieces like bagel bites so it doesn’t perfect and burn at the top of the air fryer and two if you turn it over halfway it won’t burn the bagel seasoning on the top. Thank you for sharing!

I just tried the recipe. I added a sprinkle of salt and substituted egg white for water. Certainly chewy, but reasonable good.

Are the measurements: 1/4 cup VWG, 1 teaspoon flour, 1/8 teaspoon baking soda, 2.5 Tablespoons water? Bake 20 min at 350°. I like the one gals comment that you need to knead it. Thank you, I sort of beat myself up over it, and your down to earth approach has allowed me not to quit. I've been doing this for 5 years. Covid hit, and I went berserk on my eating plan. Aldi store brand keto bread and hamburger buns are the best taste like bread items I have found and it’s already made so I don’t have to mess with making it. I wish they had hot dog buns and dinner rolls that are keto.

I will definately try this! Perhaps add some salt for more flavor. I used to bake alot of regular bread, and would add vital wheat gluten to up the protein level of the recipe.

Hi Keto Twins. I have one for you with Vital Wheat Gluten in the air fryer. I've been working on this and I'm happy with my results. 1/4 C Vital Wheat Gluten 1 Tblsp Pecan Flour 1 tsp Oat Fiber 1 tsp Allulose 1 tsp Baking Powder 2 pinches salt 1/4 C Water I shape it into a tall round biscuit shape. I ordered some small silicon mats from Amazon that are about 4" x 5". Spray with coconut oil spray. Bake the bun in air fryer at 325° for 18 min turning your roll over halfway through cooking. You need silicon mats because the dough will stick to other things. After it cools you can slice it in the middle then slice both again to create two buns. They will be a little bigger than slider buns and perfect for a hamburger slider, cold cut sandwiches or eat them warm with butter and jam. You can make these with almond flour also but they come out better with pecan flour. You can also cut each end off and slice the center into 2 pieces. You will swear you are eating soft whole wheat bread. I was ketoish but now I'm Low Carb. This bread satisfies my bread cravings. It's also good with old fashioned S.O.S. served on top - made low carb of course. No flour is in this and no meringue to whip or cheese to melt. Try it out and let me know what you think. I made them using the same amount of water as vital wheat gluten. I folded foil to a size just large enough to go under my roll. I have an air fryer oven not the one with drawer. They are chewy but I like the recipe.

Would love it if you would try the bread recipes with Bamboo Fiber. I saw some easy recipes by Low Carb/Keto recipes and having fun. Bamboo Fiber is the newest thing to keto.

I went over to the originator's video and looked at the comments. A few people recommend boiling it for a minute or two (one person said 5) and then baking it in the air fryer (or convection oven)

L❤ve you gals! Love that u state u live a relaxed lifestyle, afterall it is for life and like u it has worked for me more than any diet ever has in 40 years. Five yrs in and even with fluctuations am able to maintain within a few pounds. I would add a little more water, some avacado oil, salt and yeast. Was also wondering if lupin flour would work instead of all purpose flour? Worth a try.

I use vital wheat gluten in Deidre's low carb bread recipe. It's supposed to be 2 carbs per serving. It's ok as far as bread goes.

I may be the only person in the world without an air fryer. My toaster oven has a convection setting. Think I will try that! Thanks, Twins!❤ I’m thinking if you flattened the dough out some, maybe mixed in some rosemary, it would be like focaccia? Could be good dipped in olive oil. Going to try that when I get some wheat gluten.👍🏻

There's a type of air fryer available in USA and Britain that has a little well in the top where you put a bit of water. It's there specially to create steam for cooking bread type recipes. I think that product would make a huge difference to this recipe. But in all honesty, I think this was a winner. It was crunchy, it tore apart well, held together very well, made a product equal to bread. Just needs a bit of tweaking.
