Many different ways to make a mitered corner and some are a royal pain. This is the easiest method I've found. I always make napkins to match placemats and napkins are the easiest part and just finish off the set.

If I want a wide hem, such as 1”, would the measurement for the corners be double that to 2”?

Yes, and you also would need to make a 1” pressed hem instead of 3/4” (step 2 in the pdf). This will also make your napkins smaller.

To make the rectangle casual size, cut your yard into fat quarters, then cut the fat quarters in half.
