Got leftover turkey? you won't be disappointed with this leftover turkey wild rice soup recipe. It's creamy and cozy and irresistable.
1/2 onion chopped
2 carrots - sliced in bite sized coins
3 stalks celery- diced
1 TBSP olive oil
2 TBSp butter
3 cloves minced garlic
1/4 tsp italian seasoning
3 Tbsp flour
6 C turkey broth
1 C dry wild rice or wild rice blend (cooked until tender)
2 C chunk leftover turkey
7 oz cremini mushrooms ( diced) or baby bellas
salt and pepper to taste
1/2 C heavy cream
In a dutch oven or stock pot put oil and butter and saute the onion, celery and carrots for 5 minutes. Add the garlic and italian seasoning. Add the flour and cook for about 3-4 minutes to remove the raw flour taste. Add the broth and continue to stir. Add the mushrooms. Bring to a soft boil, and then add the cooked rice and turkey. Simmer for about 15 minutes. Take off heat and add the heavy cream. Taste for seasoning and serve with some crusty bread or salad.
