Homemade shawarma is as intriguing as it sounds and can be made with only a few simple spices and some chicken, lamb, beef, or mutton. What is shawarma for anyone who doesn’t know? It’s an old method of cooking that dates back to the 19th century Ottoman Empire in Turkey. It involves skewering thin, seasoned slices of meat then grilling it on a kind of vertical rotisserie. The meat is cut off fresh and more often than not placed into pita bread with veg and sauce. It became particularly popular as street food in the Middle East and Africa. The Turkish recipe finds a cult-like following across Europe in countries like Germany and the UK where it is very often eaten by drunks in the early hours of the morning.
This chicken shawarma recipe takes a very Mediterranean twist by incorporating spices like turmeric, cumin, paprika, garlic, cloves, coriander, and chili powder. It’s a phenomenal combination for any shawarma recipe no matter what meat you use. I also recommend having fresh, squeezable lemons at the ready for a fresh tang that carries the spices into an entirely different realm.
There is perhaps no better dish to lather in a savory or sweet sauce than a kebab. In Europe, garlic and chili sauce reigns supreme whereas more east-bound they use a lot of yogurt or zhoug sauces.
