As a Turk, Firstly, I must say that I can understand from his accent that the man in the video is not from Turkey. Turkish coffee is not an easy coffee. First of all, the coffee beans must be fresh and of high quality. This is a very important detail because it contains only coffee and no other ingredients. The guy in the video is doing this the wrong way. First, he needs to pour the coffee and add warm water to it. If you do it this way, you will get a softer coffee. In addition, he could not get the foam of the coffee into the cup, or the coffee was of poor quality and did not foam well. I drink Turkish coffee at least 3 times a day and I think I do pretty well. Turkish coffee is not drunk everywhere because you will probably get a different taste every time you drink it. You may not like it once you drink it, but it may become your favorite the next time you drink it because it is a type of coffee that requires real knowledge to make.

To add to the explanation someone else already made, the heat that is contained in the sand then releases into the container directly as it is moved through the sand. If you've ever cooked a pile of food like corn or rice for instance in a microwave, you might have already observed how the top layer can be much cooler than the inner part, and when you move it with your spoon fork, or other eating utensil, the heat and steam that is released.

You could give the same ground and tools to two people and one would demolish the coffee whilst the other cup would taste like it's out of pure heaven. It's so important to make a good cup that its still highly favoured to see if the potential bride could make a good cup for the groom and their family when they wish to get the blessings of her parents (thankfully there's electric versions now which make it a near impossibility to get wrong).

turkish coffee is really strong. it has its own distinct bitter-ish taste, that's why we serve it with a glass of water and turkish delight. when we finish the drink we flip the cup upside down and place it on the cup's plate. after some time we use the leftover coffee on the cup for fortune telling. we also make sure that the coffee has some foam too. we drink turkish coffee anytime of the day but we especially choose to serve it (we also serve tea) when guests come or when someone is getting married. this is our culture.
