Here is the complete recipe for Turkish Menemen:
Ingredients:
- 3 large eggs
- 4 large tomatoes, diced
- 4 green chilies, chopped
- Salt and pepper, to taste
- 1/4 cup crumbled cheese (Mozzarella, Turkish kaşar or feta work well)
Instructions:
1. Heat a large pan over medium heat.
2. Add the chopped green chilies and sauté for 1-2 minutes, until fragrant.
3. Add the diced tomatoes and cook for 5-6 minutes, stirring occasionally, until they start to soften and release their juices.
4. Mash tomatoes coarsly.
5. Season with salt and pepper to taste.
6. Crack the eggs over the tomatoes and chilies in the pan.
7. Scramble the eggs gently, breaking them up into small curds, until they're cooked through.
8. Cover and cook on low flame until eggs are cooked as per your desire. (Keeping them full cooked or half as per your choice.)
9. Sprinkle the crumbled cheese over the top of the menemen.
10. Cook for an additional 1-2 minutes, until the cheese is melted and the eggs are cooked to your desired doneness.
11. Serve hot, garnished with chopped fresh parsley or chili flakes if desired.
Tips:
- Use ripe, flavorful tomatoes for the best flavor.
- Adjust the level of heat to your liking by using more or fewer green chilies.
- Don't overmix the eggs - you want to leave some soft, creamy curds in the menemen.
