Lokum is one of my favorite sweets, especially rose flavor! They look like little gems. They are not well known here in the US but my city now has a Turkish Delight shop with many flavors.

@@TFT I live outside the Midwestern city of St Louis Missouri. Not far from Chicago. We have a large Middle Eastern/Arabic population. They also sell many types of baklawa too!!

I've never made lokum before and followed your video - it turned out beautifully! When my arm recovers from so much stirring, I am going to make another batch. This was so much easier to follow than the written recipes, especially to see how it should look at each stage!

Greetings from Washington state, Aysenar! I made your lokum recipe. It turned out great. Like you said, it’s a little softer than the ones you buy but we liked the texture. I substituted 2 cups of tart cherry juice for the water in the starch stage. Other than that I followed your recipe exactly and had great results! I just made the one flavor, added chopped nuts to the pot of lokum before pouring into an 8x11 glassware. Looking forward to trying other flavors with fresh juices. Love your videos! My daughter and I thoroughly enjoyed our 3 week road trip through Türkiye this past April. I think Türkiye cast a spell on me as I’m now obsessed with all things Turkish😊esp food!

You can store for 1 month of so, might be even more but never tested since it finishes quickly:)

I can't tell you how happy I am that you finally made these ❤️ My first and only attempt with lokum was something like 10 years ago and they came out too sweet, and too strong in rose flavour. I can't wait to make these for my family during Christmas. Can I use rose jam? I can't find a proper way to use it and my jar has been sitting in my pantry for months!

Does the wheat starch make it more chewy? I tried it with corn starch and it comes out too liquid and soft.. but I prefer the bouncy and chewy lokum ☺️ and I don’t want to add gelatine … can you tell me what is the secret to make it bouncy? Thanks

In theory, corn starch contains no gluten. Wheat starch on the other hand can still have (varying amounts of) gluten in it. I haven't tried this, so I'm just guessing: but what if you add a bit of wheat gluten to your corn starch? Or use wheat starch if you can get it.

It’s a white powder to help condition dough or sweets ( makes it soft). It is in baking powder. 1teaspoon baking powder= 3/4 teaspoon cream of tartar + 1 teaspoon baking soda.

What type of starch do you use? I am wondering if that is what makes the difference. Starch can be made from different plants (e.g. wheat, corn, potatoes). Wheat starch still may contain traces of gluten and maybe that is what makes it a bit more chewy?
