Clearly a tamale fan. I like them for breakfast (we are heavy breakfast, light supper people). My favorite is the cheese and jalapeño tamale. While they steam, I heat up some green enchilada sauce and fry a sunny side up egg. On the plate: tamale covered with the verde sauce topped with an egg. If I have some cojita, I will sprinkle a little bit on the egg. I have done the same thing with the pork tamales and a red enchilada sauce. Both are yummy and very warming in the morning.

You ever notice how close spices and techniques of Mexican and a lot of Asian food overlap? Chili Oil is a thing in Mexico too but slightly charred for smokey flavour that actually goes great in Pho. Try Thai red chilies in your Posole next time. Try throwing some carne asada in some Chow Mein. Throw some Chinese hot mustard on your Tortas. Try throwing Salsa Verde on salty pork Bao. I'm Mexican but I love all types of Asian food bro. Traditional stuff too. It's fun to order from 2 different places and mix together.

I have a steamer you can throw in the microwave for however long and stuff comes out great in it. I got it years ago when I lived in Korea and I haven't been able to find another one since. So unfortunate.
