The 7-foot-tall line comes from Camilo, who's like what 15-16 years old? So his memories of Bruno are from back when he was a little kid, so it kind of makes sense that he might remember him as bigger and scarier than he was. Personal theory on Camilo saying Bruno's 7 feet tall: Camilo was a younger, shorter kid when Bruno left, so in his mind's eye he's always been this giant figure. Camilo grew up, but he's always remembered his uncle towering over him. That, or Camilo's just extra.

Camilllo was the only one saying actually bad things about Bruno himself, everyone else was talking about his prophecies. I figure either Camillo's stirring up trouble like he do, or he was so young when Bruno left that that's genuinely how he remembers him, tall and scary with rat minions and glowing eyes. The life of her dreams is not the life everyone thinks it is, and she's actually expecting the life she's going to have is the "perfect" life Alma wants for her. That's why she goes on to sing "I'm fine" at the end of her repeat of her verse during the dinner portion and replaces the entire second half of her verse in the second repeat of everyone's lines with "and I'm fine, and I'm fine, and I'm fine. I'll be fine". She's unhappy with with what everyone else (presumably, Bruno would be part of this everyone else) thinks is the life of her dreams, and her having the only "good" verse about Bruno is just furthering her being forced into living this "perfect" life as the eldest grandchild. She doesn't want the life she's singing about.
