Hi Becky, just a suggestion for cutting corn off the cob, if you use a bunt pan to hold the cob in the center tube it makes it really easy and catches all the kernels as well. Have a blessed day 😊

Hey Becky. If you don't have a bundt pan, you can use any dish you want the kernels to fall onto, and place a small bowl, turned upside down, in the middle of the dish, and place the cob, on the small bowl

19:22 when preserving corn you don't need to blanch it first. Just cut it off the cob and freeze like normal. It cooks up beautifully and doesn't stick together like it does when you blanch it.

Hi Becky! A tip I learned when making a family favorite, monster cookie bars, is to save the butter wrapper & use it to press the bars into the pan.🙂

Your last rice crispy treat video sent me down a rabbit hole to make the best rice crispy treats ever. I’ve done the brown butter and loved it. I made homemade marshmallows and it was amazing. Next time I’m toasting the cereal (an Alton Brown tip) and trying your idea to add small ones at the end. Then I may or may not toast it. Thanks for starting me onto such a fun quest! -Natalie

Hello Becky, It is hard to believe that your baby is already 6 months old! What a blessing. You have done well with the greenstocks outside the window. Yes, I did notice them and the hanging baskets. It looks like you are getting back into the swing of things and the class you and your mother are working on is going to be exciting. I am looking forward to all your new adventures as a mom in a new home and working in a new garden while putting together all new landscaping around your house. What exciting times for you and Josh!

Hey Becky, an easy way to get the blueberry mixture onto the little cakes is to put the mix into a frosting bag and pipe it onto the cakes.

I have made mini cheesecakes before and used a vanilla wafer (whole) as the crust. Eliminates the need for graham cracker crust and tastes delicious! Thanks for the other recipes.

If your heart is not set on a graham cracker crust, there is an easier way to make the crust layer. Just put a Nilla vanilla wafer in the bottom of the cup and put the cheesecake filling on top; bake, and top with pie filling of your choice.

Everything looks yummy! I'm a senior citizen, but always learn something every time I watch you. I was thinking that after melting the marshmallows, you could add the cereal, fold in more marshmallows, then spread the mixture into your pan. Then you could sprinkle some marshmallows on top and lightly toast under the broiler.

My youngest daughter always requests the mini cheesecakes at every family function. We don't care for Graham crackers crust so I use a Vanilla Wafer, works perfectly. I vary the topping by what is seasonal just to mix it up

Spray your hands with Pam when pressing the Rice Krispie treats in the pan! Works like a charm, no stick!

I have found nothing that works better for cutting the kernels off the cob than the kernel cutter from pampered chef. That thing is seriously amazing.

Hi Becky, Just a quick hint when you are putting your rice crispy mixture onto your tray. To stop the parchment paper from sliding around everywhere just lightly spray some water onto your baking tray, tip off any excess water but don’t dry it. Place the parchment paper onto the damp tray and it will hold the paper in place while you add your mixture and it won’t move around. Also good when you put cookies on too. I hope that little hint helps. Thanks for another great video. I can’t believe your little man is 6 months old already. I’m so glad you and Josh are enjoying your little family of 3. Take care. When I make anything with cream cheese, I mix the cheese first into a fairly smooth consistency. Then add all the other ingredients. It mixes up much easier and faster than trying to mix ingredients into a block of cheese, even though it's softened. Everything looks delicious.

a little tip, if you spray a little oil on the bottom of your sheet pan before putting the paper on it, the paper will stay put and not move around. You only need a little bit on each corner and the middle for it to work

A family favorite is caramel rice crispy bars. Split the rice crispy bar mixture into two pans so you have two thin layers. Make a caramel sauce to the top of one of the pans. Use a caramel recipe that will firm up but not harden. Sprinkle Minnie marshmallows over the caramel. Sandwich the other rice crispy layer over the the top so you have a caramel marshmallow center. It’s super good!

Strawberry jam then if you wanted add a whole strawberry on top of each one. That sounds really good. I'm going to try that corn dip. I bet it was amazing! Thanks as always for sharing!

Evrerything looks scrumptious! Your friend is lucky to have you and you were so kind to jump in and help. I love making corn dip, but I have never made a hot one. But I definitely will! I make mine with canned ingredients. 2 cans each (drained) of corn, Rotel and black beans (also rinsed). Mix together 8 ounces softened cream cheese, 1 cup of shredded cheese (your choice), 1 cup sour cream and salt and pepper to taste; add to vegetables. Serve with Frito Scoops ( this is mandatory, according to the friend who gave me the recipe).

Becky, if you use a Bundt or angel food cake pan (one with the hole in the middle) and stick the corn cob end in the hole the kernels stay contained and easy to measure or transfer.

Try making some Cowboy Caviar as a dip with tortilla chips. I always have to double this recipe when my kids are visiting. They devour it! Super easy to make ahead of time. Similar to Salsa, but also has corn, black beans, black-eyed peas, etc.

Use an upside down Bundt pan when taking corn off the cob. Place the cob on the center piece that is raised and all the pieces that come off the cob drop into the pan. Makes clean up easy.

To fill the cheese cake cups with filling one could try using an icing bag with a round 1/2 inch (or so) tip. The filling will just splooosh out a small amount as you fill the cups.

There are a couple of things my mom used to do. In the rice crispies she would add a packet of Kool-aid mix, any flavor you want, to the melted marshmallows and stir in. Also she made mini cheesecake bites with a oreo(whole) in the bottom for the crust. Loved the flavored rice krispy treats. I've never heard of anyone else doing that but you never know. ;)

I put my corn into a shallow stainless steel bowl with a wide berth and when the cutter pops kernels they usually end up in the bowl. Your cheesecakes look amazing and those dips sounds scrumptious. You are a very kind friend to help out like this. Hope the party is fantastic!

I use a mini crockpot, lined with a liner to heat and serve so dip stays warm. Just a suggestion.

Love the mini cheesecake recipe! Quick tip: put the fruit topping in a icing bag or, if you don’t have one, use a baggie with a tiny snip of one bottom corner and then you may squeeze the topping out easily onto each mini bite.
