gochugaru (fine, not coarse) www.amazon.com...

[[RECIPE]]
3 cup water (or anchovy broth)
1 Tbsp sesame oil
1/2 cup pork belly or jowl (alternative: 1 can tuna. or eliminate meat if you want)
1 cup Kimchi
1 tsp gochugaru
1 tsp minced garlic
1 tsp soysauce
1 tsp oyster sauce
1/2, medium sized onion, sliced
1/2 container of firm tofu
1 scallion, chopped
1. in a heated pot, add sesame oil and cook the pork.
2. add 1 cup of sliced kimchi (cut into bite size)
3. add gochugaru, garlic, oyster sauce, and soysauce and stir fry until fragrant
4. add 3 cup water or broth, and boil 10 mintutes
5. add sliced onions, tofu, and scallions and boil another 10 minutes.
6. enjoy!

I am cooking for my grandparents during winter and I made my own vegetarian (my grandparents are vegetarian for health reasons) version a week ago, soo good! I will definitely try to improve my version to the max! :)

vegetarian options! - gochujang - vegan kimchi - vegetarian oyster sauce (mushroom) - silken tofu - mushrooms - vegetable stock - I like to add rice vinegar or soy sauce for a more “fishy” flavour

My absolute favorite Korean soup/stew... I had a ritual when I lived in Gapyeong, some evenings after work I would take a bus to the nearby indoor swimming pool and swim laps, tire out my body, then shower and go to the nearby food court afterwards, where the cooks there made a phenomenal super spicy kimchi jjigae... it was so satisfying after a swim. I miss that. This recipe does look pretty easy! I will have to try it 🌶

I had the exact same routine when I lived in Singapore. Work, walk to the pool, swim and tire myself out. Go eat dinner at the nearest hawker centre. It didn’t have Korean food but still some of the best food I’ve eaten in my life.

I just made some for the first time with tuna and at first I was worried (the frying process did not smell good lol) but it’s so delicious and addicting. Thanks for the recipe!

second! though I've never had kimchi jjigae, and i doubt i will since there's no vegetarian option, i Just love it. it screams comfort and warmth to me. Im so glad you posted this video, more people are going to know about kimchi jjigae :)) as always, keep cooking and much love

i've ordered vegan kimchi jjigae at a restaurant before and it was yum! Just use kombu stock, a variety of mushrooms and tofu :)

You can use vegi-broth instead of pork in it I recommend you enjoy varitations on the typical style cuz the essence of this dish is beautifully soured kimchi itself 😊

there are definitely many vegetarian kimchi jjigae recipes! even vegan versions! try to look up recipes on here! dashi stock is a great substitute when it comes to the broth :) you can find at your local asian market even daiso! instead of pork you can use a can of tuna! jongga kimchi is a great vegetarian kimchi! you can add some mushrooms and tofu to your stew! highly rec you check out maangchis bok choy doenjang jjigae! seonkyoung longest on here is a korean vegan and she has many vegan recipes to try out, mommy tang also makes a vegan kimchi jjigae :)

You can definitely make a vegetarian option, just make sure that your Kimchi is vegetarian (it can contain beef broth, fish sauce, and shrimp). I like to just use tofu for the protein, and add potato and vegetables like zucchini, winter squash, carrots, mushrooms, and spinach instead of the meat.

this recipe would be great if you use sesame oil to fry the kimchi and aromatics instead of pork fat! kombu or mushroom dashi would also give you a big flavor boost without any meat

This turned out sooooo good and really hit the spot!!! I didn’t have tofu so I added lots of Zucchini. I’ll definitely be making this again! Thank you!

You're right, this recipe absolutely tastes better the next day! Thank you for the easy to follow and delicious recipe. One modification I made is adding the onions together with the anchovy broth, I like them softer and I think it infuses the flavour into the soup better. Cheers 🥂❤️

I made this today and it came out bland even when I followed every step. I added chicken bouillon and for some reason it brought out all the flavor. So good!

Never tried it before, but thought I'd give it a go. Didnt taste too good, so I let it simmer longer. It Was actually amazing, will definitely be a regular dish from now on

Secret to getting oyster sauce or honey out of a measuring spoon? Spray it with a little cooking spray before you measure!

I have a kimchi question for anyone in the know- I’ve heard that you need to use old kimchi, the more fermented the better, but I never know how long to leave the jar in the fridge until it’s ready to use… Is old a month or two, 6 months long enough to use to make kimchi jigsaw? What’s the right time frame here? Many thanks in advance 😊

Usually it's more than 3~4 months, and if it turns too sour, you can and some sugar to balance it out. If you're new to kimchi, i recommend you use 3 months old kimchi, and if you know what it tastes like, try fermenting it longer.☺

could you also do a vegetarian/vegan variant which come close to the original? I always try making it at home but i feel like a specific ingredient is missing which gives the deep comforting flavor!

It's probably the pork or tuna that gives it that flavor. Maybe try with mushrooms to mimic that deep flavor?

plenty of veg/vegan recipes in youtube and online for alternatives! you can use a dashi stock which adds some depth to the broth, if youre vegetarian fish can def help, stir frying tuna or adding fish sauce will provide depth as well

@@aluna1234 No, that’s wrong. Let me explain. Vegetarians don’t eat any animals (meat & fish) but eat animal products like dairy, eggs, and honey. Vegans don’t eat any animals or animal products. Pescatarians eat everything vegetarians eat, plus seafood, but no meat. Your friend is mistaken. That said, some people are flexible and don’t adhere to one diet all the time, but then they’re not vegetarian anymore. You can literally google this, there’s just no way that vegetarians eat animals.

You mention using anchovy stock if you have it, and I've heard that from other people as well, but I've never been able to find it! Any tips on where to get it? I tried H Mart, but I'm not actually sure which section it would be in, and I'm admittedly way too scared to ask for help finding anything

I don't know if you'll see this so long after you posted, but I have pretty much everything to make this (different kind of pork but that's okay) except I don't have oyster sauce. Can I just leave it out or can I replace it? Or will it not taste quite right without it?

I've read that toasted (or dark) sesame oil is not good to cook with and should be used as a finishing oil only due it its low smoke point. I'm surprised you're using it to cook the pork....
