Aircraft engines are as redundant as possible. Engines with dual spark plugs will primarily have them for increased reliability. I bet they also drive them with independent ignition coils / electronics. Any aircraft engineers care to comment?

They have to be. Aircraft cant just "pull over" if something fails. Thats why Boeing got in trouble using only one sensor to control their MCAS system, causing two 737 aircraft to crash.

American LaFrance 12 cylinder fire engines had two distributors and dual spark plugs back in the 1950s and possibly earlier. Some Ford 2.3 4 cylinder engines (variants of the old Pinto engine..not the garbage 2.3 Ford makes now) had dual spark plugs as well as did the Nissan NAP-Z 4 cylinder engines.

honda's stratified charge engine required a mostly lean air fuel ratio to reduce emissions, but kept it rich where the intake valve was. therefore they could only situate the plug at one location, making dual plugs obsolete, unless using a plug with two contacts at the tip.

U can have as many sparks as u want! Without sufficient air and fuel to go with it u ain’t making anymore power. Period
