Rinsing it with water, is how you're supposed to eat salt-cured meat, historically. It rehydrates the meat at the same time. The salt-curing was just a way to preserve things - you weren't supposed to eat them like that, unless you had no other option. Yes, that goes for things like beef jerky too. You're actually meant to rinse and re-hydrate it.
