Yea the pitmasters either get a share in the company or they leave after a couple of years and open their own shop, that's the tradition in the Texas BBQ world. And over the years people left to make their own mark. For example the young female pitmaster, she was in another video featuring Goldies and she mentioned that she will leave and open her own thing.

@@Kenny-yl9pcIt’s because, when you work in a barbecue pit long enough, you find something that you want to tweak SO BAD. But you’re someone else’s pit master, so you can’t. Open your own barbecue pit? Now you can make that perfect whatever that’s been itching at you for ages. I’m a Texas native, and while my family isn’t that well known, my father specifically is a 3 time chili cookout champion. I used to camp out on chili cookout site with him for a week, sometimes two, and help him make that chili

@@ypw510yeah bbq is expensive, but you have to factor in the overhead cost of it. The cost of beef, the fact they had to cook it for 12-14 hours, pay an employee for that time, buy the wood, etc - it’s actually a really reasonable cost at the end of the day. I mean, you’re paying for POUNDS of food. Go to any high end restaurant and you pay more for less
@ypw510
@ypw510 6 ай бұрын
@@Benzy670 The last time I got some really good barbecue it was brisket. I'm guessing about 6 ounces of meat, a roll (kind of disappointing but even some of the best places just serve white bread), and two really good sides for $20. I used to go to a tribal casino that on M-Th had a buffet with a superb wood-grilled tri-tip for $10. They did have a lot of financial difficulties though, but I think the price of their buffet was the least of their concerns. Here in California there's a guy who does Texas-style barbecue and has gotten a lot of national attention, although some for the wrong reasons (like allegations of underpaying his employees and not often supervising the work). That cost about as much as Goldee's even though their costs would be ostensibly be higher in California.

I'm not sure about waiting 4 hours in line though, but I've been to places with tremendous reputations where it might have been an hour My fav is a place that has pizza. I've been in line as long as an hour, but it was worth it every single time. When there's something worth waiting in line for, people will do it.

In a weird way, waiting with my partner to get some fresh supplies for a homemade brunch, is part of the experience of a good semi-lazy weekend morning. Talking to people in line, seeing other regulars, etc. Love it. I'll wait 30 minutes for their croissants any day of the week.

They get lines well out the door when they open, although there might be no line just before they close but where the choices may be slim to none. It's really good though, where the owner has a Cambodian name, but apparently was trained in France. I've been to a few other places where I waited in line - sometimes really long. Tartine in San Francisco might be the best known. Their croissants are crazy good. Bouchon Bakery in Napa Valley always has a long line on weekends, and maybe even weekdays. But it's pretty reasonably priced compared to uber expensive wine country options.

@@mchonkler7225 I dunno. I lived in Texas a decade - and while I don't miss the state one iota, you absolutely CANNOT get BBQ like that anywhere in the US. Sure, some cities will have a single BBQ item they may do well, but nearly every other city or state doing BBQ has to rely on sauces. Carolina, Memphis, St, Louis, Kansas City, etc. - Texas BBQ don't need no sauce! And they have a much wider selection of meats to choose from - I have never seen Cabrito anywhere other than Texas or Mexico, just as an example.

I've bene in Arlington for 11 years, and I so feel this statement. I can walk to amazing ramen (Kintaro), world-class barbecue (Hurtado), and ultra-dank burgers / pho / tacos in essentially any direction. I just found this place SuShi Domo recently, and it's a whole vibe - last night they spoiled us with complimentary jalapeno salmon ceviche & mochi... Not to mention most of the people are pretty cool and we have decently forward-thinking representation in the community. Dallas and Fort Worth are honestly cooler cities than I would've thought, but the mid-cities are truly a unexpected gems in Texas!

If you think about it, what exactly defines high end cuisine? Taste? Labour? French cuisine is considered fine dining because of the amount of labor, time and skill that goes into making things like demiglace, but I'd argue that smoking something for 12 hours and adjusting for the minute differences in temp is just as labour intensive and fiddly Fortunately even though bbq can cost a lot it doesn't also have the "haute cuisine" up charge that would make it untenable for people to pay for Wish I lived somewhere with a bigger bbq scene cuz it's expensive as hell here in Canada

I’ve had literally hundreds of BBQ joints between Texas, Tennessee, Alabama, Georgia, North Carolina, Pennsylvania, Arizona, Nevada, California, Washington, Idaho, Montana, Nebraska, Illinois, Colorado, Kansas, Missouri, Mississippi, Florida, Oklahoma, Arkansas, and Kentucky. And of these states, my favorite is still Texas beef brisket, and of the Texas BBQ joints I’ve been to, Goldee’s still surpasses them all. My next favorite was a hole-in-the-wall joint in Memphis, Tennessee. But even as good as they were, they were still nowhere near the experience of Goldee’s. Oh, and FTR, Austin BBQ is not that great. Lol.

These two gentlemen always make my day. I am very happy to see them every time they travel around the world to try something different. Very happy that they love that Texas food. Everything tastes so good and flavorful and juicy I'm happy they enjoyed it.❤

One thing about these guys, when they come to the states they do their homework, and do it right. Enjoying the best food and iconic places the way they're supposed to be enjoyed. This, along with their fun spirit makes them a joy to watch.

It always great to see people not from the states come here and try real food for the first time. Their reactions are absolutely priceless.
