Just as an FYI - That mother is classic negligent abusive, and turns her negligence into a way to attack her children for not being equipped to handle situations she never prepared them for. Michael's incompetence is, ultimately, not his fault. You can't do a job you weren't trained for, you can't run a business you're not experienced with, you can't come fresh outta any form of education and just take over like this. I legit feel sorry for that guy. And I know the show was trying to make Michael out to be some overly emotional moron, but let's face it, if I had some nutjob screaming at one of my job sites like that one worker did, he'd be out that day. First time it happened, sent home, second time, get the hell outta here and don't come back. Sometimes Kitchen Nightmares is so focused on making a villain that they don't actually address core issues. The mother should have been long gone, and Jerry was just as at fault for everything as Michael is. They immediately fingered him as the problem, which means they knew he wasn't doing a good job, and they just... didn't hire someone to do that job? Michael seemed to be pretty decent with customers and the kind of guy who wants to get along with people. Make him a manager, get him educated in balancing budgets and managing inventories, and hire a real head chef. But nah. Kitchen Nightmares needed a villain, and Michael was chosen to be that guy.

A lot of the problem in restaurants and even fast food today is that they are all trying to appease every taste. They think that a huge menu with something for everyone will bring more customers. Nothing could be further from the truth. In fact it usually results in a reduction in the quality of both the food and the service. Also, as you pointed out, the diversity of restaurant types / cuisine suffers. No one restaurant stands out for a specific cuisine. When it doesn't matter which place you go, what's to look forward to?
