Both look delicious, but the Cucumber salad could be a complete lunch for me. Maybe add a hard-boiled egg or a few shrimp for a light supper It's nice to have cool options in this hot weather. Thanks for sharing.

I've actually done shrimp with it before and loved it as a cold salad for lunch. I bet a side boiled egg would be great too!

Have you tried substituting of Avacado with Zucchini? Many grow Zucchini and have it coming in fast! Few have avocado trees....

Sure anyone is free to substitute what they have on hand for the avocado. I've not tried it with any of my zucchini yet, and the flavors would change, but it can be modified to fit any needs for sure. :)
